تعتبر كعكات نورمبرغ هذه وقتًا رائعًا لتحضيرها في المنزل. عندما نضيف المكونات واحدة تلو الأخرى ، نشعر باقتراب فصل الشتاء. كادت تسمع طقطقة المدفأة في مطبخه! تخيل: المكسرات واللوز والفواكه المسكرة والتوابل مع قليل من نكهة الليمون الطازج ، كلها ملفوفة في كب كيك مغموس بالشوكولاتة. أفضل جزء هو أنه يمكن تحضيرها مسبقًا ، لأنها لا تحتوي على زبدة أو طحين على عكس Lebkuchen الكلاسيكي. أعطيك الوصفة التي أعددتها كالمعتاد: أضفت المكونات كما شعرت ، مع الإشارة إلى كل ما فعلته. لأنه في النهاية ، عندما تفكر في الأمر ، فإنه يشبه قاعدة من المرزبانية المطبوخة ، والتي تضيف فيها المزيد من المكونات “الغريبة”! كما أنني أعطيك خيارين لقولبة كعكاتك وأشرح لك كيفية الحصول على شوكولاتة ناعمة أو على العكس من ذلك مع تموجات صغيرة … في صحتك للأعياد !!
وصفة شوكولاتة إليزنلبكوشن:
– 100 جرام ليمون مسكر
– 100 جرام برتقال مسكر
– 500 جرام لوز
– 125 جرام جوز
-150 جرام شجر بني
– 100 جرام سكر
– نكهة ليمون غير معالج
-150 جرام من البيض
-3 ملاعق صغيرة من مسحوق القرفة
-1 ملعقة صغيرة من مسحوق الزنجبيل
-1/2 جوزة الطيب المطحونة
-1/4 ملعقة صغيرة يانسون مطحون
-1/2 ملعقة صغيرة من 4 بهارات (لأن هناك فلفل وقرنفل)
– صحائف الفطير
– 300 جرام شوكولاتة بالحليب
ضع الليمون المسكر والبرتقال المسكر (هنا على شكل مكعبات) في وعاء الخلاط. أذكرك أن هذه فواكه مسكرة بالسكر وليست ليمون ملبس بالملح !!
قم بتشغيل محضر الطعام واطحن قدر الإمكان إلى قطع صغيرة جدًا.
أضف اللوز والجوز واستمر في الطحن إلى مسحوق غير ناعم جدًا.
قلل إلى مسحوق ليس ناعمًا أيضًا.
يُسكب المسحوق في وعاء ويضاف السكر الناعم والشرج البني.
أضف قشر الليمون.
تحضير وخلط البهارات التي ستضيفها إلى الوعاء. بالنسبة لخلطات التوابل ، أستخدم دائمًا الملاعق الأمريكية (قياس الملاعق). ملعقة قهوة يتوافق في الواقع مع ملعقة صغيرة (فوقها ملاعق كبيرة). أنا أقيسهم دافق. تجدهم الآن في كل مكان تقريبًا أو هكذا على موقع ئي باي.
قبل إضافة البيض ، خذ الوقت الكافي لأخذ نفس عميق! رائحة اللوز والجوز والبرتقال المسكر والليمون مع البهارات مدهشة للغاية !! ثم أضف البيض (في الصورة يوجد بيضتان فقط ، ولكن يوجد بالفعل 150 جرامًا من البيض ، أضفت بعضًا بعد التقاط الصورة).
قطع دوائر 6 سم من طبقات متداخلة من الفطير.
باستخدام مغرفة الآيس كريم (التي تحتوي على مكشطة في الأسفل) ، املأ حتى أسنانها بالخليط.
ثم توضع كرات العجين على رقائق الخبز (الجانب المخفوق لأسفل).
خذ قدرًا صغيرًا بقاع مسطح. خذ فيلمًا مطاطيًا وقم بتصوير الجزء السفلي. يُزيت الفيلم بقليل من الزيت ثم يُسحق العجين برفق ، عموديًا ، على الخبز الخالي من الخميرة. اقلب المقلاة رأسًا على عقب وقشر lebkuchen برفق.
افعل نفس الشيء لجميع الكعك.
الخيار 1: يمكنك طهيها بهذه الطريقة لمدة 20 دقيقة عند 180 درجة مئوية. سيبقون منتظمين.
أو الخيار 2: يمكنك إعطاء الشكل الحقيقي للبكوشن عن طريق وضع الكعكة على قاعدة (علبة من الصفيح بحجم الكعكة أو غير ذلك …) عندها ستكون كافية لتنعيم حافة الكعكة. بهذه الطريقة سيكون لديهم هذا الشكل النموذجي الذي يمتلكه lebkuchen. سيوفر لك هذا الاضطرار إلى البحث عن قالب lebkuchen (نعم لأنه موجود !!).
اطبخ بنفس الطريقة. يجب أن تكون الكيكات طرية من المنتصف ومقرمشة قليلاً حول الحواف.
في جميع الحالات (الخيار 1 أو 2) اتركها تبرد على رف سلكي.
يمكنك أن ترى بوضوح صفيحة الخبز الخالي من الخميرة تحتها. مفيد جدا لأنه يسمح للكعكات بعدم الالتصاق ببعضها البعض …
قم بإذابة شوكولاتة الحليب (يمكنك تلطيفها بالطريقة الموضحة هنا ) ثم قم بغمس Elisenlebkuchen رأسًا على عقب حتى الحافة ، ولكن ليس أكثر ، كما في الصورة.
ارفعي الكيك بالشوكة واكشطي الشوكولاتة الزائدة عن حافة الوعاء.
ضع الكعك على رف سلكي فوق ورق زبدة.
يمكنك هز الشبكة لإزالة علامات الشوكة أو ، كما فعلت هنا ، النفخ على الشوكولاتة لمنحها أشكالًا موجية صغيرة على سطح الكعكة. في النهاية وجدته أجمل في النهاية …!
اتركي الشوكولاتة لتبرد ثم احفظي الشوكولاتة Elisenlebkuchen في علبة. سيبقون لعدة أسابيع!
