مع صديقي العزيز ماجالي الذي يعيش في اليابان ، كنا نسير في أزقة سوق أميا يوكوتشو بالقرب من حديقة أوينو في طوكيو. لقد وجدنا متجرًا للمعجنات الحرفية هناك يقدم “daïfuku mochi” محلي الصنع. لكن في صندوق صغير ، كان هناك بسكويت صغير مع طحين Kinako ، دقيق الصويا المشوي اللذيذ. الكب كيك المقرمشة ، ذات الأشكال غير المنتظمة التي تضيف إلى مذاقها الفريد ، رؤية غريبة بشكل خاص. لا نعرف حقًا ما إذا كان بإمكاننا تناولها لأنها تبدو وكأنها قطع صغيرة من الخشب مصقولة بالماء. من الواضح أنني حاولت إعادة وصفة في المنزل وإليكم النتيجة. بالطبع أراك قادمًا: للعثور على دقيق كيناكو ، عليك الذهاب إلى متجر بقالة ياباني أو على الإنترنت! هذه الغريبة ليست حلوة جدا. يتم نقلنا في رحلة باتجاه واحد عبر مسارات حديقة أوينو في يوم ربيعي جميل!
وصفة شورتبريد Kinako-sesame:
-100 جرام شجر أشقر أو بني
– 300 جرام طحين
– 20 غ من كيناكو
– 20 جرام سمسم محمص
-180 جم زبدة غير مملحة في درجة حرارة الغرفة
– 10 جرام زيت سمسم محمص
– شراب قصب السكر
-كينكو
ضع السكر والدقيق في وعاء.
نخلط ثم نضيف دقيق الكيناكو.
ضعي بذور السمسم في خلاط صغير أو هاون لطحنها إلى مسحوق ناعم.
أضيفيها إلى الوعاء ، ثم أضيفي الزبدة وزيت السمسم.
امزج باليد للحصول على عجينة متجانسة.
نضع كرة العجين على ورق زبدة ونفردها بسمك 5 مم.
ضعي العجينة الملفوفة في الثلاجة لمدة 45 دقيقة ، حتى تنضج قليلاً. ثم قطعها إلى شرائح بعرض 15 مم.
افصلي الشرائح واخبزيها في فرن مسخن مسبقًا على 160 درجة مئوية لمدة 20 دقيقة.
يجب أن تكون شرائح العجين ذهبية اللون.
دعهم يبردوا على رف الخبز.
في هذه المرحلة ، يمكنك الاحتفاظ بشرائح العجين المطبوخ في وعاء محكم الغلق. بمجرد غمسها في شراب وملفوفة في دقيق كينكو ، ستبقى كعكة الغريبة مقرمشة لمدة يومين. لذا قم بما يلي عند الحاجة (لحفل شاي على سبيل المثال!).
ضعي شراب قصب السكر في وعاء واكسري قطع البسكويت باليد التي تنقعينها لمدة ثانية.
عليك فقط تغطيتها بالشراب.
دعهم يستنزفون على شبكة ثم ضعهم في صندوق تملأه بالكيناكو. أضف المزيد والمزيد من الكيناكو على الكعك الصغير قبل إضافة شورتبردج جديد.
اتركيه في الدقيق لمدة 15 دقيقة ثم أخرجي كعكة الغريبة بعناية.
قم بإزالة الكيناكو الزائد بأصابعك ثم ضعها في صندوق محكم الإغلاق!
