للبقسماط:
360 جرام طحين
80 جرام نشاء ذرة
1 نصف ملعقة صغيرة بابريكا
1 نصف ملعقة صغيرة مسحوق كاري
1 ملعقة صغيرة بودرة ثوم
1 ملعقة صغيرة مسحوق بصل
رشة جيدة من مسحوق الفلفل الحار
ملح فلفل
لتحضير الصلصة:
1 بيضة
20 جرام خل
190 جرام زيت
1 ملعقة صغيرة مسحوق بصل
1 ملعقة صغيرة بودرة ثوم
50 جرام كريمة كاملة سميكة
1 ملعقة كبيرة بقدونس مجفف
1 ملعقة كبيرة ثوم معمر مجفف
1 ملعقة كبيرة من الشبت المجفف
ملح ، فلفل ، فلفل حار
Instructions :
خذ الفخذين (في الصورة 3 ، لكن خذ 4). افصل الفخذين عن الفخذين.
تقليم الدهون الزائدة.
تصب في وعاء مع مكونات التتبيلة. أضف الملح والفلفل. تخلط بعناية.
دعها ترتاح بينما تقوم بإعداد الباقي. صب مكونات البقسماط في وعاء كبير آخر. أنا آخذ الثوم ومسحوق البصل وليس السميد.
أضف البهارات. أضف الملح والفلفل.
ضعي قطعة من الدجاج في فتات الخبز ولفيها جيدًا.
افعل نفس الشيء لجميع القطع.
للحصول على القوام الخاص ، اغمر الدجاج لمدة ثانية في وعاء من الماء البارد ثم ضعه مرة أخرى على الفور في فتات الخبز.
يعطي حمام الخبز الثاني قوام الدجاج المقلي.
سخني مقلاة أو مقلاة مع 4 سم من الزيت على الأقل. يجب أن يكون الزيت ساخنًا ، لكن ليس كثيرًا ، وإلا فإن الدجاج سيصبح بنيًا كثيرًا دون أن يكون لديه وقت للطهي بالداخل.
