عندما أذهب إلى تايلاند ، أطلب هذا الدجاج الرائع بنكهة أوراق الباندانوس. ورقة الباندانوس هي في الواقع ورقة شجرة نخيل ولا يمكن أكلها. يستخدم على نطاق واسع في المطبخ التايلاندية لعطرها. لها رائحة غريبة جدا متى نحن نسحقه أو عندما نطبخه. لكن لا داعي للذعر! هذه الوصفة ممتازة بالفعل من تلقاء نفسها. إذا لم تتمكن من العثور على الأوراق ، يمكنك تتبيل الدجاج وطهيه في مقلاة أو مقلاة ساخنة جدًا. كان اهتمامي الأول بهذه الوصفة هو أن أجد لك وصفة صلصة التغميس. من السهل العثور عليه في السوبر ماركت في بانكوك ، ولكنه مستحيل ، حتى في اليوم الثالث عشر في باريس ، لذلك أردت استنساخ هذه الصلصة. روايتي ستعطيك نفس الشيء بالضبط. لم أستطع حتى معرفة ما لدي من الزجاجة التي اشتريتها هناك. لا تنتظر أكثر من ذلك لطهي هذا الطبق اللذيذ. أعطيت هذه الوصفة لطلاب إحدى ورش الطبخ وأحبها الجميع!
وصفة الدجاج بأوراق الباندانوس:
-5 أفخاذ دجاج -30 ورقة بندان -5 جذور كزبرة (أو سيقان حفنة كزبرة) -1 ملعقة صغيرة من الفلفل الأسود المطحون -3-4 فصوص ثوم -3 ملاعق كبيرة من الليمون المفروم (2 من سيقان الليمون) – 3 ملاعق كبيرة سكر – 2 ملاعق كبيرة صلصة الصويا الخفيفة -4 ملاعق كبيرة من صلصة المحار -4 ملاعق كبيرة زيت سمسم محمص -2 ملاعق صغيرة من بذور السمسم الأبيض
لتحضير صلصة التغميس: – 155 جرام سكر – 65 جرام سكر قصب كامل – 60 جرام شراب الجلوكوز – 100 جرام ماء – 20 جرام صلصة صويا داكنة -1 ملعقة صغيرة من الملح – سمسم أبيض (لرش الصوص)
ابدأ بتحضير الصلصة (التي نغمس فيها قطع الدجاج). نضع المكونات: السكر ، السكر الكامل ، شراب الجلوكوز ، صلصة الصويا الداكنة.
يخلط ويضاف الماء ويوضع على نار معتدلة.
اجعلي الصلصة تصل إلى 110 درجة مئوية.
نضع الصلصة جانبا ونتركها تبرد. إذا كانت الصلصة سميكة جدًا ، يمكنك إضافة القليل من الماء لتخفيفها.
عظم أفخاذ الدجاج وإزالة الجلد. ثم تقطع إلى 6 قطع أصغر.
هنا جذر الكزبرة ، لكن يصعب العثور عليه …
يمكننا في هذه الحالة استبدال سيقان حفنة من الكزبرة.
ضع الفلفل الأسود في الهاون.
أضيفي الثوم وسيقان الكزبرة.
سحق حتى تحصل على عجينة.
قم بإعداد عشبة الليمون (في الصورة ، هناك أكثر بكثير من الوصفة ، واعتمد على هذه الوصفة !!). فقط قم بإزالة القاعدة والجزء العلوي من الساق.
ثم يقطع ناعما بسكين. أضف الليمون إلى الهاون.
قم دائمًا بالسحق بقوة للحصول على عجينة.

أضيفي المعجون إلى قطع الدجاج.
أضف صلصة الصويا الخفيفة.
السكر.
صلصة المحار.
والسمسم الأبيض (غير محمص!).
دع الدجاج ينقع لمدة ساعة على الأقل أو طوال الليل ، سيكون أفضل!
يمكنك تحضير الطي بالأوراق قبل الوجبة وقليها في اللحظة الأخيرة.
غسل وفرز أوراق الباندانوس. قص القاعدة والطرف المشطوف بمقص.
اطوِ الثلث الأول من الورقة كما في الصورة.
اطوِ الجانب الآخر في شكل مثلث.
اقلب الورقة. ثم يوجد وعاء صغير للدجاج …
ضعي قطعة دجاج في الصاج.
أضعاف الجانب الأيمن فوق الدجاج.
ثم مع نفس الورقة ، تجول في الأسفل وثني الطرف تحت الطية الأولى.
اسحب وشد كعقدة ربطة عنق. افعل نفس الشيء مع الدجاج كله. إنه أخيرًا سهل للغاية!
ضع الزيت فيها أ قدر (8 سم على الأقل) أو مقلاة. عندما يكون الزيت ساخنًا بدرجة معقولة ، ضعي بضع شرائح من الدجاج فوقها.
تقلى لمدة 5 دقائق ، مع التحريك من حين لآخر دون فك العقدة ، لطهي الورقة بأكملها. يتم طهي كل شيء عندما يتغير لون الورقة.
قدمي الدجاج ساخناً مع الصلصة المبردة مع رش بذور السمسم. فرحة خالصة!
ثم التقط قطعة الدجاج بالشوكة واسحبها من ورق الألمنيوم واغمسها في صلصة الكراميل! لأن الورقة لا تؤكل!
