هنا هو وصفة “تراو جنون” محلية الصنع. أقدم لكم وصفتي الأقرب إليها! تعبت من البحث في كل مكان عن وصفة ، بدأت كالمعتاد في تطوير الوصفة بنفسي. واجهت الكثير من المشاكل في العثور على النسب الصحيحة من خلال الاحترام الصارم لمكونات مصنع بونت أفين للبسكويت الشهير. ولكن هناك !! والتحدي الأكثر إثارة بالنسبة لي هو أنه دائمًا ما تكون الصيغة السحرية “بيض-زبدة-سكر-دقيق” هي التي تعمل وأنا دائمًا مندهش جدًا من كمية المنتجات التي يمكننا تقديمها بجرعات مختلفة … مع “kouign aman” و “Breton Cake” و “الفطائر” و “الفطائر” الأخرى ، مررنا معًا بالعديد من حلويات بريتاني العزيزة!
وصفة “تراو جنون”:
– 40 غ من صفار البيض
– 170 جرام سكر ناعم
-260 جم زبدة شبه مملحة
– 30 جرام حليب كامل الدسم
-400 جرام طحين
-1/2 ملعقة صغيرة من البيكينغ باودر
– حليب منزوع الدسم للتزجيج

ابدأ بخلط الزبدة شبه المملحة والسكر.
اخلطي صفار البيض والحليب كامل الدسم.
أضيفي الزبدة والسكر واخلطيهم جيداً حتى تحصلي على كريمة.
اخلطي الدقيق والبيكنج بودر. أضف الدقيق مرة واحدة إلى خليط الزبدة والصفار والسكر.
ثم امزج دون إصرار.
نضع العجينة بين ورقتين من ورق البرشمان ونفردها بسمك 6 مم …
اتركي العجينة لتبرد (30 دقيقة).
سخني الفرن إلى 200 درجة مئوية.
قطع العجين بدوائر 6 سم (يستخدم traou mad دوائر 5.5 سم ، من المستحيل العثور عليها ولكن على أي حال لن ترى الفرق على أي حال 0.5 سم!) مغطى مسبقًا بطبقة رقيقة جدًا من الزبدة أو شحم إطلاق العفن في علبة بخاخ ( أنا أستعمل هذه الخيار الأخير).
رتب على صينية خبز مبطنة بورق زبدة.
قم بالطهي لمدة 12 دقيقة ثم افصله عن القالب بمساعدة جسم دائري … إنه ضبابي للغاية ولكن يمكننا استخدام الكثير من الأشياء !! أنا أيضًا أستخدم مجتذب الفم (الأسطواني حيث يجب عليك فقط الالتفاف دون توقف …). بهذه الطريقة سنقوم بتسطيح الكعكة ونكون قادرين على سحب الدائرة.
في مصنع البسكويت ، يضعون علامة على الكعكة قبل الخبز.
مرري ضربة فرشاة مغموسة في الحليب منزوع الدسم.
ثم ارجع إلى الفرن ، راقب لمدة 5-7 دقائق حتى تكتسب اللون البني.
كل ما عليك فعله هو تركه يبرد على رف سلكي ثم تخزينه في صندوق محكم !!
