منذ بعض الوقت ، أحب Traou Mad حقًا تقريري الصغير الذي قدمته عن مصنعهم في بونت أفين (انظر التقريرهنا). لقد طلبوا مني منذ ذلك الحين عمل بعض الوصفات لمدونتهم: http://blog.traoumad.fr/. لذلك كان من دواعي سروري أن أتلقى في المنزل حزمة مليئة بالعجائب! أواصل شراكتى مع كعكات بريتون المفضلة ، “traou mad” … لشهر مارس ، أقدم لكم وصفة بسيطة وسريعة ، لكنها مع ذلك لذيذة وطازجة ومقرمشة! أستخدم traou mad كقاعدة ، مثل تارتليت صغير ، وأزينه بعد ذلك بمربى التوت الأزرق ، والكريمة المخفوقة ، والتوت الأزرق الطازج و من واحد كريمة الكستناء الكريمية. من السهل جدًا أن تملأه لبوفيه حلو!
وصفة لـ 16 تراو جنون بالتوت الأزرق وكريم الكستناء:
-16 تراو جنون كيك
-180 جم كريمة الفانيليا والكستناء
-180 جم مهروس الكستناء غير المحلى
– 15 غ من الروم العنبر
-120 جرام مسكربون
– جرة من مربى التوت الازرق
– 125 جرام من العنب البري الطازج
– 100 جرام كريمة مخفوقة
ضعي في وعاء ، مهروس الكستناء غير المحلى ، كريمة الكستناء بالفانيليا (وحلوة جدًا !!) ورم العنبر.
ملاحظة من برنارد: إذا قمت بخلط بيوريه الكستناء وكريمة الكستناء بالفانيليا ، فذلك لأنني أجد أنه مع الكريم فقط ، ستكون النتيجة حلوة للغاية. الهريس خالٍ من السكر ويعيد توازن الكل.
تخلط بمضرب كهربائي لمدة 5 دقائق.
أضيفي الماسكاربوني واستمري في الخفق لمدة 2 إلى 3 دقائق.
جهز لعبة traou mad بوضع نصف ملعقة صغيرة من مربى التوت الأزرق في المنتصف.
أضف القليل من الكريمة المخفوقة.
رتب حبة توت على الكريمة المخفوقة.
ضعي كريمة الكستناء في جيب مزود بفوهة مخدد وزينيه بصنع قبة من كريمة الكستناء على الكريمة المخفوقة.
أنهِ الأمر بإضافة توت أزرق في الأعلى وقليل من السكر البودرة.
