أنا أتوقع الموسم قليلاً لكني صادفت الكوسة في الجزء العضوي من سوق الحي. فجأة أردت ضوء الشمس على الطبق! أنا أحب خليط الكوسة والريكوتا ، لذلك أردت صنع تورتة لذيذة منه. مع الشبت والبارميزان ننتهي بجزء لذيذ سنرافقه بكل سرور مع السلطة الخضراء.
وصفة فطيرة قطرها 24 سم:
عجين :
400 جرام طحين
270 جرام زبدة نصف مملحة
20 جرام سكر
1 بيضة
ريكوتا ميجين:
6 ملاعق كبيرة زيت زيتون
3 كوسة
2 فصوص من الثوم
350 جرام ريكوتا
60 جرام جبن بارميزان مبشور
2 بيض
2 ملاعق كبيرة شبت مفروم طازج
الملح والفلفل وجوزة الطيب
للأعلى:
1 كوسة صفراء
1 كوسة خضراء
تعليمات :
ابدأ بتحضير العجين. صب الدقيق والسكر والزبدة المقطعة إلى قطع في وعاء محضر الطعام أو في وعاء.
امزج مع الورقة حتى تحصل على تناسق رملي (أو بأطراف أصابعك بدون روبوت!).
ثم أضيفي البيضة واخلطيها مرة أخرى حتى تحصلي على عجينة ناعمة.
لا حاجة لتهدئتها. خذ ثلاثة أرباع العجين (جمد الباقي) ووزعها على ورق خَبز بالقليل من الدقيق.
املأ صينية الفطيرة.
نقطع العجينة الزائدة. ضعيها في الثلاجة بينما تحضرين الباقي.
تفضل الكوسة متوسطة الحجم لهذه الوصفة. في المجموع ، استخدمت 4 كوسة خضراء وواحدة صفراء (التقطت الصورة قبل معرفة ما كنت سأستخدمه حقًا).
ابشر الكوسة الخضراء الثلاث.
اسكبي 6 ملاعق كبيرة من زيت الزيتون في مقلاة كبيرة مع فصوص الثوم المقشرة والمفرومة ناعماً.
سخنيها على نار متوسطة وأضيفي الكوسة.
طهي لمدة عشر دقائق. ثم قم بزيادة الحرارة لمدة 3-4 دقائق لتبخر المزيد من العصير.
في وعاء ، اخلطي الريكوتا والبارميزان والبيض معًا. ضع الملح والفلفل حسب ذوقك. أضف القليل من جوزة الطيب.
اقطع الشبت جيدًا للحصول على ملعقتين كبيرتين تضعهما في الصداع النصفي.
نضيف الكوسا المطبوخة وتخلط جيدا.
تصب فوق قشرة الفطيرة.
انتشر بعناية.
نقطع الكوسة الصفراء والكوسة الخضراء إلى شرائح رفيعة.
ثم رتبهم فوق الفطيرة.
رشي عليها القليل من زيت الزيتون والملح والفلفل ، ثم اطهيها لمدة ساعة و 20 دقيقة على حرارة 185 درجة مئوية. أصبح دافئًا واستمتع بسلطة خضراء جيدة!
