وصفة سهلة ولذيذة قد تجعلك ترغب في إعادة اكتشاف كرنب بروكسل. أنا أحبه ، لكني أرى الكثير من الناس بداهة. أقترح هذا الطبق الذي يمكن أن يكون بمثابة مرافقة أو يمكن تناوله بمفرده. طبقة من الفطر بصلصة جورجونزولا ، مغطاة ببراعم بروكسل سوتيه بزيت الزيتون وجوز البقان بجبنة البارميزان. إنه ناعم ومقرمش ومريح!
وصفة لأربعة أشخاص:
500 جرام كرنب بروكسل
500 جرام فطر من اختيارك
3 فصوص ثوم
20 سنتيلتر كامل الدسم
70 جرام جورجونزولا
ملح ، فلفل ، زيت زيتون
للفتات:
40 جرام زبدة نصف مملحة
40 جرام فتات الخبز
40 جرام من جوز البقان
40 جرام جبن بارميزان مبشور
الفلفل الطازج المطحون
اغسل وصفي كرنب بروكسل.
قطع القاعدة الصغيرة وإزالة الأوراق التالفة إذا لزم الأمر. نقطع الكرنب إلى نصفين.
سخني مقلاة كبيرة بملعقتين كبيرتين من زيت الزيتون. ضعي أنصاف الكرنب ، وقطع الجانب لأسفل.
شويهم برفق.
ثم ضعي الغطاء واطهيه لمدة 10 دقائق على نار معتدلة مع التقليب بانتظام. يجب أن يكونوا رقيقين.
تحضير الفطر. أضع الكثير من shiitakes و shimejis وما إلى ذلك. ولكن يمكنك وضع تلك التي تختارها!
نقطعها إلى قطع ثم نضعها في المقلاة مع ملعقتين كبيرتين من زيت الزيتون وفصوص الثوم المقشرة والمفرومة.
دعها تطبخ حتى تنضج وتبدو جيدة لك.
يُسكب الكريم ويُضاف الجورجونزولا الذي يذوب بسرعة كبيرة. الفلفل حسب ذوقك.
اتركيه جانبًا أو حضري الكرنب أثناء طهي الملفوف أو الفطر. يقطع البقان بسكين.
تصب في وعاء مع المكونات الأخرى (الزبدة ، جبن البارميزان المبشور ، فتات الخبز).
تخلط باليد حتى تحصل على كرة عجين.
اصنع قطعًا صغيرة تضعها في صينية خبز.
يُطهى لمدة 15-20 دقيقة على نار دوارة عند 170 درجة مئوية. تكييف الطبخ مع فرنك. يجب أن يكون كل شيء ذهبيًا بشكل جيد.
عندما تبرد الفتات ، قسّمها إلى قطع مقرمشة.
قدِّم جميع العناصر ساخنة جدًا معًا: أصنع سريرًا من الفطر ، وأضيف براعم بروكسل ، ثم أرشها بالجوز المنهار والمقطع.
Choux de Bruxelles, champignons sauce gorgonzola et crumble parmesan noix de pécan
Coupez la petite base et enlevez au besoin les feuilles abimées. Coupez en deux les choux.
Faites chauffer une grande poêle avec deux cuillerées à soupe d’huile d’olive. Posez les demi-choux, face coupée vers le bas.
Faites-les griller légèrement.
Placez ensuite un couvercle puis laissez cuire 10 minutes sur feu plus modéré, tout en remuant régulièrement. Ils doivent être tendres.
Préparez les champignons. J’ai mis pas mal de shiitakés, des shimejis etc. Mais vous pouvez mettre ceux de votre choix !
Coupez-les en morceaux puis placez-les dans la poêle avec deux cuillerées à soupLaissez cuire jusqu’à ce qu’ils aient bien ramolli et que cela vous semble bien.e d’huile d’olive et les gousses d’ail épluchées et hachées.
Versez la crème et ajoutez le gorgonzola qui va fondre très vite. Poivrez à votre goût.
Mettez de côté ou alors préparez le crumble pendant la cuisson des choux ou des champignons. Hachez les noix de pécan au couteau. Versez dans un récipients avec les autres ingrédients (beurre, parmesan râpé, chapelure).
Mélangez à la main jusqu’à avoir une boule de pâte.
Faites des petits morceaux que vous placerez dans une plaque allant au four.
Faites cuire 15-20 minutes sur chaleur tournante à 170°C. Adaptez la cuisson à votre four. Le tout doit être joliment doré.
Quand le crumble refroidit, séparez-le en morceaux bien croustillants.
Servez l’ensemble des éléments bien chaud ensemble : je fais un lit de champignons, j’ajoute les choux de Bruxelles, puis je parsème de crumble et de noix hachées.
