هذه وصفة أقوم بإعدادها كثيرًا منذ أن أعدتها لي صديقة جيدة جدًا من بو (كريستين!) قبل بضع سنوات. صدر بط لذيذ مطبوخ بإتقان مع شرائح مانجو مطبوخة في دهن البط. كل شيء يعلوه صلصة كراميل مع الخل البلسمي والعسل وغراند مارنييه فلامبي. أعجوبة صغيرة يقدرها الضيوف دائمًا! أقترح طريقة لطهي ثدي البط مسبقًا قبل العشاء (بعد الظهر) وبالتالي تجنب رائحة الدهون أثناء الوجبة. والنتيجة رائعة والبط يبقى وردي اللون كما تريد.
لمرة واحدة في الوصفة ، أستخدم منتج Picard! أنا بالفعل أشتري المانجو الخاص بهم ، لأنه من ناحية جيد جدًا ، علاوة على ذلك فهو عملي للاستخدام. لأنه من الصعب جدًا الحصول على شرائح جميلة بدون جلد بالمانجو الطازج.
وصفة بط المانجو لـ 4 أشخاص:
-2 أثداء بطة جميلة -8 شرائح مانجو مجمدة (بيكارد!) -2-3 ملاعق كبيرة من الخل البلسمي -2 ملاعق صغيرة من العسل -40 مل من جراند مارنييه -ملح فلفل
ضعي جانب جلد ثدي البط لأسفل في مقلاة ساخنة جدًا.
اتركيه للطهي للحصول على بشرة ذهبية لطيفة. اقلبها لتطهى لمدة دقيقتين على جانب اللحم.
وبالتالي ستطبخ البطة بشكل مثالي وستكون هذه العملية جاهزة بالفعل!
ضعي صدور البط في طبق يتم وضعه في الفرن. اتركه ليبرد ، ثم متجر بارد حتى اخر النهار.
حفظ الدهون من المقلاة !!
عندما يأتي العشاء ، قم بإعادة تسخين المقلاة بما يعادل ملعقتين كبيرتين من الدهون من صدور البط. ضعي المانجو (مذاب!) على نار عالية نسبيًا. الملح والفلفل لهم.
في نفس الوقت ، ضعي صدور البط في فرن ساخن (200 درجة مئوية) لمدة 15 دقيقة.
عندما تبدأ المانجو في التحول إلى اللون البني ، اقلبها لطهي الجانب الآخر.
عندما تنضج المانجو ، أخرجيها من المقلاة (على طبق مغطى بورق الألمنيوم) ، أضيفي الخل البلسمي إلى الدهن وعصير المانجو في المقلاة.
أضف العسل.
ثم جراند مارنييه التي نصنعها حريق.
اتركي الطهي لمدة 2 أو 3 دقائق.
أخرج البطة من الفرن ، ومن بعد قطعها إلى شرائح.
يبقى الطبخ مثاليًا حتى بعد مروره في الفرن!
ضع اثنين من المانجو على طبق ساخن مع نصف صدر بطة مقطعة إلى شرائح لكل شخص. يُسكب الكراميل فوق اللحم والمانجو. قدميها على الفور.
