أقوم بتجربة الكثير في الوقت الحالي على ثانغ تشونغ ، بعد يودان. هذه تحضيرات سريعة جدًا لصنع الدقيق والسائل. هذا يحسن بجنون من تناسق الكعك أو الخبز. أقدم لكم وصفة البريوش على الإفطار برائحة الزبدة الطازجة والروم والفانيليا ، والتي ستستعيد نعومتها المذهلة بمجرد وضعها في المحمصة. قنبلة صغيرة مع زبدة جيدة نصف مملحة للدهن ، أو جيلي التوت الأسود على سبيل المثال!
وصفة لقالب طوله 30 سم:
ثانغزونغ:
35 جرام طحين T55
180 جرام حليب نصف منزوع الدسم
لتحضير العجينة:
كل thangzhong
465 جرام طحين T55
240 جرام بيضة
130 جرام سكر
5 غ من خميرة الخبز المجففة (أو 10 غ طازجة)
5 جرام ملح
1 ملعقة كبيرة شراب الروم
1 ملعقة صغيرة من خلاصة الفانيليا السائلة
155 جرام زبدة غير مملحة
التذهيب:
1 بيضة
1 ملعقة كبيرة حليب
تحضير thangzhong. ضعي الدقيق (35 جم) والحليب في قدر صغير واخفقي جيدًا لإزالة الكتل. يُطهى على نار خفيفة أثناء الخفق.
يجب أن يثخن كل شيء دون أن يغلي. أطفئي النار واتركيها جانباً لتبرد لمدة 10 دقائق.
ضعي جميع المكونات في وعاء محضر الطعام ما عدا الزبدة. ضع كل thangzhong المعدة جيدا.
اعجن لمدة 10 دقائق.
ثم نضيف الزبدة على شكل قطع ونعجن حتى تتجانس مع العجينة.
العجين لزج جدا.
ضع فيلم مطاطي ملامسًا ثم ضعه في الثلاجة طوال الليل.
في اليوم التالي ارتفعت العجينة وهي باردة جدًا.
انزع الغلاف البلاستيكي واقسم العجينة إلى ثلاث كرات متساوية الوزن. طحينهم جيدًا في هذه المرحلة.
دحرج كل كرة في نقانق بطول 40 سم.
ثم اصنع جديلة من ثلاثة خيوط. أغلق النهايات جيدًا.
ضعها في المقلاة المبطنة بورق الزبدة.
أرش القليل من الماء (لدي زجاجة رذاذ صغيرة لا تكلف شيئًا ، وهي سهلة الاستخدام) لمنع العجين من الجفاف.
دع العجين يرتفع لمدة ساعة و 45 ساعتين في درجة حرارة الغرفة.
تحضير التذهيب عن طريق خلط البيض والحليب ثم تمرير القليل منه على السطح بفرشاة.
اخبزيها على حرارة 160 درجة مئوية لمدة 50 دقيقة.
ضع قطعة قماش على البريوش بمجرد خروجها من الفرن للحفاظ على أكبر قدر ممكن من الرطوبة. للحصول على كل النعومة ، ضعي الشرائح في المحمصة ، إنها متعة مطلقة!
Préparez le thangzhong. Mettez la farine (35g) et le lait dans une petite casserole et fouettez bien pour éliminer les grumeaux. Mettez à cuire sur feu doux tout en mélangeant au fouet.
Le tout doit épaissir, sans bouillir. Coupez le feu et mettez de côté à tiédir 10 minutes.
Mettez tous les ingrédients dans la cuve de votre robot sauf le beurre. Mettez bien tout le thangzhong préparé.
Mettez à pétrir pour 10 minutes.
Ajoutez alors le beurre en morceaux puis pétrissez jusqu’à ce qu’il soit intégré dans la pâte.
La pâte est très collante. Mettez un film étirable au contact puis placez au réfrigérateur toute une nuit.
Le lendemain la pâte a gonflé et est bien froide.
Enlevez le film étirable et divisez la pâte en trois boules de même poids. Farinez-les bien à ce stade.
Roulez chaque boule en un boudin de 40cm de longueur.
Puis faites une tresse à trois brins. Refermez bien les extrémités.
Placez dans le moule garni de papier sulfurisé.
Je vaporise d’un peu d’eau (j’ai un petit vaporisateur qui ne coûte rien, très pratique) pour éviter le dessèchement de la pâte.
Laissez gonfler la pâte 1h45-2h à température ambiante.
Préparez la dorure en mélangeant l’œuf et le lait puis passez-en sur la surface avec un pinceau.
Mettez à cuire à chaleur tournante, à 160°C pendant 50 minutes.
Mettez un linge sur la brioche dès la sortie du four pour garder le maximum d’humidité. Pour récupérer tout le moelleux, passez les tranches au grille-pain, c’est un délice absolu !
