وصفة برانداد لـ 6 أشخاص:
– 850 جرام سمك القد أو بولوك
– 650 جرام بطاطس
-4 فص ثوم
-150 مل زيت زيتون
-150 مل من الكريم السائل الكامل
-ملح فلفل
– الزعتر ، ورق الغار ، البقدونس
إذا كنت تستخدم سمك القد المجفف ، اتركه يحلي بالماء البارد (قم بتغيير الماء عدة مرات) لمدة 12 ساعة على الأقل.
قم بوزن سمك القد بمجرد تحليته لأنه يستعيد وزنه مع الماء.
نضع السمك النيئ (بولاك أو القد المحلى) في الماء البارد مع الزعتر وورقة الغار.
ضعيها على نار خفيفة واتركيها حتى الغليان. توقف عن الطهي بمجرد أن يغلي الماء.
صفي السمك.
اهرسي السمك بالشوكة.
للحصول على فتات السمك.
أثناء الطهي ، تُبخر البطاطس المقشرة على البخار وتقطع.
بمجرد طهيها ، اهرسيها باستخدام هراسة البطاطس.
سخني الفرن إلى 210 درجة مئوية.
ضع 150 مل من الزيت (يبدو كثيرًا ولكن هذا كل شيء!) في قدر كبير (الذي يستخدم لطهي السمك. أضف فصوص الثوم المهروس.
اطبخي لمدة دقيقتين حتى تشم رائحة الثوم. أضف السمك المفتت.
أضف البطاطس المهروسة.
اخلطها بمضرب يدوي حتى لا تتمكن من تمييز البطاطس عن السمك.
أضف الكريمة الطازجة السائلة الكاملة.
اخفقي جيدا مع الملح والفلفل.
نصيحة برنارد: يمكنك بالطبع إضافة البقدونس الطازج المفروم جيدًا!
ضع البرانداد في طبق جراتان. حك السطح بشوكة. صب رذاذ من زيت الزيتون في الأخاديد التي تم الحصول عليها.
اخبزيها على حرارة 210 درجة مئوية لمدة 20 دقيقة لتحمير السطح (شاهد …).
