عجينة حلوة: -130 جم سكر بودرة -1/4 ملعقة صغيرة ملح
-1/2 ملعقة صغيرة فانيليا -2 بيض – 30 غ من مسحوق اللوز – 500 جرام طحين -350 جم زبدة طرية غير مملحة
ابدأ بتحضير العجين. أنتقل كثيرًا إلى عجينة مصنوعة من “الدهن”. وهذا يعني أننا نمزج أولاً المكونات مثل البيض والزبدة للحصول على الكريمة ، ثم نضيف الدقيق مرة واحدة ونخلط ما يكفي فقط دون الإصرار على الحفاظ على الهشاشة وعجين الفوندان. ضعي جميع مكونات العجينة ما عدا الدقيق والزبدة في وعاء الروبوت أو في وعاء عادي!
امزج جيدًا مع محضر الطعام (“k” من kenwood أو Kitchenaid!) أو بملعقة خشبية إذا لم يكن لديك محضر طعام.
اتركيه لمدة دقيقة ثم أضيفي الزبدة.
اتركيه لمدة دقيقتين أو ثلاث دقائق للحصول على كريم ناعم.
يضاف الدقيق كله دفعة واحدة ويقلب فقط بما يكفي لخلطه. دون إصرار.
العجين جاهز!
ضعي العجين كله على ورقة 30×40 سم من ورق الزبدة.
ثم ضع ورقة ثانية في الأعلى. وزعي العجينة على 3 مم بين هاتين الصفحتين. قطع الفائض للحصول عليه فقط بحجم الورقة.
توضع هذه العجينة في طبق من نفس الحجم بحافة متوهجة وتترك لترتاح في الثلاجة لمدة ساعة على الأقل.
بعد ساعة جيدة ، سخني الفرن مسبقًا إلى 180 درجة مئوية ، وخز العجين على سطحه بالكامل ثم اخبز لمدة 20-25 دقيقة على الأقل حتى أن العجين ملون على السطح بأكمله.
قم بزيادة درجة حرارة الفرن إلى 190 درجة مئوية.
أثناء خبز العجين ، قم بتحضير الجزء العلوي من المن.
ضعي قشر البرتقال المفروم ناعماً في الكريمة السائلة.
يوضع على نار خفيفة ليغلي. من الغليان الأول ، يرفع عن النار ويترك لينقع.
في قدر آخر نضع السكر والماء وشراب الجلوكوز على نار متوسطة.
دع الخليط يغلي …
و كراميل.
عندما يكون الكراميل لونًا جميلًا من خشب الماهوجني (يكون داكنًا تمامًا ولكنه غير محترق!) ، قم بإعادة تسخين الكريم لإضافته إلى الكراميل ساخناً. اخلط جيدًا ، مع الانتباه إلى البقع. ولكن إذا تمت إضافة الكريم ساخنًا جدًا ، فلا يمثل ذلك مشكلة.
ثم تضاف الزبدة.
وعسل الأكاسيا.
اخلطي جيدا واتركي الخليط حتى 125 درجة مئوية. وهو ما يستغرق بعض الوقت! دون التوقف عن الخلط ، يستغرق الأمر من 10 إلى 15 دقيقة تقريبًا.
سخني اللوز في الميكروويف (إذا كان باردًا ، سيتصلب الكراميل على الفور!) واسكبه في الكراميل الناتج.
خلط جيد .
وصبها بالكامل فوق المعجنات القصيرة.
أملس جيدًا بملعقة بزاوية أو حتى بملعقة خشبية. يجب أن يكون كل شيء موحدًا.
ضعيها في الفرن لمدة عشرين دقيقة أخرى. لا يزال من الضروري المراقبة بانتظام حتى لا يحترق كل شيء !! لكن السطح يجب أن يكون من خشب الماهوجني ، ويجب تحميص اللوز! نخرجه من الفرن ونتركه يبرد.
انقله إلى ورقة جديدة ، وقم أولاً بإزالة تلك التي كانت تستخدم لخبز الكعكة. قطعي حواف البسكويت ثم ضعي التفاصيل بالحجم المرغوب!
