بعد فصل الطهي ، بقي لي بعض لحم الخنزير المفروم وتناولت العشاء لأطبخه. غالبًا ما أصنع هذا النوع من الأرز المقلي ، دون أن آخذ الوقت الكافي لنشر وصفة. لا يعني الأرز المقلي أن الأرز ذهب إلى القلي ، فقط أنه عاد مع الكثير من الأشياء الجيدة في المقلاة. يمكنك دائمًا تكييف كل شيء حسب ذوقك. أقدم لكم هنا وصفة بسيطة بمكونات يسهل العثور عليها ، وقد صنعتها بعد ورشة عمل. الريحان التايلاندي الذي أضعه في النهاية اختياري. سيكون عليك فقط طهي الأرز في اليوم السابق لتتمكن من فصل الحبوب في المقلاة. لقد استلهمت من العديد من أنواع الأرز المقلية التي تذوقتها خلال رحلاتي في تايلاند. نتيجة عطرة جدا!
وصفة لأربعة أشخاص:
300 جرام أرز تايلاندي
400 مل من الماء
3 بيضات
1/2 بصلة بيضاء
1 فلفل أحمر
1 طائر أحمر صغير مصنف
3 سم زنجبيل مبشور طازج
2 فص ثوم مفروم ناعم
150 جرام بازلاء
300 جرام من لحم الخنزير المفروم
1 ملعقة كبيرة سكر
1 ملعقة طعام nuoc mam
8 ثوم المعمر الصيني
حفنة صغيرة من الريحان التايلاندي
زيت بذور اللفت للطبخ
ملح ، فلفل أسود
ابدأ الليلة السابقة للسماح للأرز بالبرودة طوال الليل في الثلاجة ، مما سيسمح له بالخروج لاحقًا. اغسل 300 جرام من الأرز الخام في مصفاة صغيرة بالماء النظيف لمدة دقيقة واحدة.
صفيها وضعيها في طنجرة أرز أو في قدر مع 400 جرام من الماء.
أغلق الغطاء واتركه يطهى لمدة 15 دقيقة أو في الوضع التلقائي باستخدام جهاز طهي الأرز.
ثم اترك الأرز المطبوخ يبرد واسكبه في وعاء. ضع فيلمًا مطاطيًا وضع كل شيء في الثلاجة طوال الليل.
في اليوم التالي: صب 3-4 ملاعق كبيرة من الزيت في مقلاة. سخنيها على نار عالية وكسري البيض فيها.
تخلط بخشونة ثم لا تلمسها بعد الآن. دع الأومليت يطهى على جانب واحد قبل قلبه.
تصب على لوح التقطيع وتقطع إلى قطع. اتركيه جانبا.
يقشر نصف بصلة ويقطع ناعما. نفرم الفلفل ونقطعه إلى قطع صغيرة.
تُرفع البذور من الفلفل الأحمر وتُقطع إلى قطع صغيرة. بدون البذور ، ستكون أقل قوة وسيستمر الجانب المحترق أقل!
يُسكب البصل والفلفل الحلو والثوم المفروم والزنجبيل المبشور في المقلاة (غير مغسول من العجة) مع 4-5 ملاعق كبيرة من الزيت.
أضف البازلاء (مجمدة هنا).
اخلطي جيداً واطبخي لمدة 5 دقائق مع التحريك بملعقة.
أضف الخاصرة المفرومة (من الواضح أنه يمكنك استبدالها بلحم آخر).
يُمزج جيدًا ويُضاف السكر و nuoc mam والملح والفلفل حسب الرغبة. دع اللحم يطهى جيدًا.
عندما ينضج اللحم جيدًا ولا يوجد عصير تقريبًا في القاع ، أضف الأرز البارد.
تخلط جيدا لفصل كل الحبوب. قد يستغرق الأمر 2-3 دقائق. ثم أخيرًا أضف العجة على شكل قطع.
نقطع البصل الأخضر جيدًا (لا أضع الجزء الأبيض ، أو أتوقع وضع هذا الجزء مع البصل الأبيض في بداية الوصفة).
يقطع الريحان التايلاندي. إذا لم يكن لديك واحد ، فإن الوصفة جيدة بالفعل بدونها!
