Sesame Peanut Hot Sauce Noodles

I already told you about Din Ta Fung, this famous Taiwanese restaurant chain, in my Hong Kong culinary trip (report HERE). I never go to chain restaurants, except this one, because once you’ve tasted their “Xiao Long Bao”, it’s impossible not to think about it! But they make other dishes than “dumplings” and I recently tried these noodles with sesame and peanut hot sauce. A real little taste bomb. Visually, it may not be very pretty, but the taste is incomparable. It looks a bit like satay sauce, but with sesame cream on top. I reproduced the recipe at home and I’m sharing it with you today. 

Drain and rinse with fresh water. Another option, simpler in my opinion, is to cook the sauce below, while the pasta is cooking. In this case, there is no need to rinse them with fresh water. It will then be enough to serve immediately.

Prepare the sauce: 

Put the red curry paste and two tablespoons of water in a saucepan. 

Mix well over moderate heat, then add the sesame cream. 

Add the peanut butter. 

We obtain a rather compact paste. Dilute with water (better yet, with pasta cooking water).

Add enough water to obtain a sauce that is not too fluid either, a bit like a custard. Add the brown sugar.

And the nuoc nam. 

The sauce is ready. Taste and adjust the consistency of the sauce by adding a little water if necessary. The sauce can be served liquid or creamy, either way it will be very good!

Prepare the sesame by putting the toasted seeds in a mortar to make a powder.

Serve the dish by pouring the sauce into 4 bowls and placing the hot pasta on top, with a little toasted sesame powder. Serve very hot and enjoy immediately!
