After my trip to Greece, I have a lot of recipes in mind that I want to share with you! Here, a simple one of grapes cooked in sugar that gives something between jam, compote and fruit in syrup. It’s a real treat with a very thick Greek yogurt. I had eaten this on the last day of my stay. If I had known I was going to like it so much, I would have eaten it from the start. It was so good. Anyway, I got my revenge, because I made plenty at the workshop to post on my cooking blog!
Recipe for 1kg of glyko stafyli :
1kg of seedless white grapes
500g of sugar
150ml of water
1 lemon slice
For this recipe, use seedless white grapes.
Detach them from their clusters and rinse them in cold water.
Place them in a saucepan with the sugar.
Pour in the water and place the lemon slice on top.
Bring to a boil.
Let cook for almost an hour over moderate heat.
Stir from time to time.
The syrup will take a beautiful color.
Stop the heat when the syrup thickens a little. Be careful not to make it too thick either, because as it cools it will get even thicker. Let cool and store in a jar.
With Greek yogurt, especially the thicker strangisto, it’s a delight!
Serve the yoghurt chilled with the glyko stafyli available. Be careful, it goes very fast !
