Carrés miel-noix

L’automne est là avec son lot de délices réconfortants. J’adore les noix et j’ai beau avoir sans doute proposé des recettes mélangeant miel et noix sur mon blog, j’ai toujours plaisir à chercher de nouvelles textures. Ici, la pâte ressemble à un shorbread, le tout nappé d’un caramel à base de miel et et de beurre demi-sel, richement garni de noix. La texture est fantastique et ces carrés sont très addictifs ! Ingredients

Pâte :

Pour le « caramel » :

100 g beurre demi-sel
125 g vergeoise brune
200 g miel
70 g crème
1 c. à café extrait de vanille liquide
180g g noix

Instructions

Commencez par préparer la pâte. Mettez les ingrédients dans la cuve de votre robot ou dans un récipient.
Mélangez avec la feuille ou du bout des doigts jusqu’à avoir une pâte homogène.
Chemisez de papier sulfurisé votre moule. Étalez la pâte à peu près à la dimension du moule.
Placez la pâte dans le moule et coupez l’excédent (il n’y en a presque pas !). Faites en sorte que la pâte soit bien homogène en épaisseur et aille bien dans les coins du moule.
Faites cuire dans un four préchauffé à 175°C sur chaleur tournante, pendant 25 minutes. La pâte va dorer légèrement.
Pour le « caramel », versez le beurre, la vergeoise brune et le miel dans une casserole. Je mets caramel entre guillemets, car ce n’est pas un caramel à proprement parler. On ne va aller bien haut en température, pas assez pour avoir une vraie caramélisation à la casserole.
Portez à ébullition en mélangeant de temps en temps. Laissez bouillir sur feu modéré pendant 5 minutes.
Coupez le feu et ajoutez la crème.
Puis les noix et la vanille liquide. Mélangez soigneusement.
Versez la totalité dans le moule sur la pâte.
Remettez à cuire 25 minutes, toujours à 175°C. Le dessus a se couvrir de bulles.
Qui vont ensuite disparaitre en refroidissant.
Laissez reposer une nuit, ou au moins 4-5 heures pour permettre au tout de prendre la bonne texture.
Coupez en petites parts et savourez !

Fall is here with its share of comforting delights. I love nuts, and while I’ve probably come up with recipes mixing honey and nuts on my blog, I always enjoy looking for new textures. Here, the dough resembles a shorbread, topped with a honey and semi-salted butter caramel, richly garnished with nuts. The texture is fantastic and these squares are very addictive! To be eaten in small portions…

Recette pour un moule carré de 20cm de côté

Dough:

155g of flour
60g icing sugar
135g of semi-salted butter

For the “caramel”:

100g of semi-salted butter
125g of brown vergeoise
200g of honey
70g of cream
1 teaspoon liquid vanilla extract
180g of nuts

The instructions

Start by preparing the dough. Put the ingredients in the bowl of your food processor or in a container.

Mix with the sheet or with your fingertips until you have a homogeneous paste.

Line your baking pan with parchment paper. Roll out the dough to about the size of the pan.

Place the dough in the pan and trim off the excess (there’s almost none!). Make sure the dough is even in thickness and goes well into the corners of the pan.

Bake in a preheated oven at 175°C on revolving heat for 25 minutes. The dough will brown slightly.

For the “caramel”, pour the butter, brown vergeoise and honey into a saucepan. I put caramel in quotes, because it’s not a caramel per se. We will not go very high in temperature, not enough to have a true caramelization in the pan.

Bring to a boil, stirring occasionally. Boil over moderate heat for 5 minutes.

Turn off the heat and add the cream.

Then the nuts and liquid vanilla. Mix carefully.

Pour the entire amount into the pan over the batter.

Bake again for 25 minutes, still at 175°C. The top is covered with bubbles.

Which will then disappear as it cools.

Let sit overnight, or at least 4-5 hours to allow it to set to the right texture.

Cut into small pieces and enjoy!
