Risotto هو في الأساس مقبلات إيطالية أرادت المطاعم على مر السنين تحويلها إلى طبق فاخر. لكن يمكننا أن نفهم لماذا. إنه في النهاية أرز فقط ، لكنه أكثر بكثير من أرز! أقدم لكم هنا وصفة الريزوتو الأولى. هناك عدد لا حصر له من الوصفات ، ولكن عليك أن تبدأ بشكل جيد! لذا أقدم لكم وصفة ريستو بالمورلس ، واحدة من المفضلة لدي!
وصفة “ريزوتو بالمورلز” لـ 4 أشخاص:
– 300 جرام أرز كارنولي أو أربوريو – لتر من مرق الخضار – 25 جرام من المورلات المجففة (أو علبة من المورلات المجمدة) -35 جرام جبن بارميزان -كوب من النبيذ الأبيض -2كراث صغير – 30 جرام زبدة وملعقة زيت زيتون -خفى
إذا كنت تستخدم الموريل المجففة ، ضعيها في وعاء أو وعاء واسكبي عليها ماء دافئ / ساخن.
اتركي المزيد من الانتفاخ لمدة ربع ساعة. احتفظ بمياه النقع لطهي الأرز. سيكون للأرز أيضًا رائحة التورل عند طهيه!
أقوم بإضافة الماء للحصول على 1 لتر من المرق وأضيف 2 مرق نباتي إلى هذا. أستخدم العلامة التجارية الموجودة في الصورة (ماجي) لأنه لا توجد محسنات للنكهة وغلوتامات أخرى.
نصيحة من برنارد: من نافلة القول أنه مع مرق الخضار محلي الصنع ، سيكون الريزوتو أفضل. لقد صنعته بالفعل عدة مرات ، لكن لمرة واحدة يستغرق الريزوتو وقتًا أطول قليلاً للتحضير! أحجز المرق منزلي الصنع لعشاء مخطط له مسبقًا ، ولكن بالنسبة للمرق المرتجل الذي أقوم بإعداده باستخدام المرق الجاهز !! لمرق منزلي الصنع: جزر ، كرفس ، بصل ، بطاطس ، كراث مع 1.5 لتر من الماء وعصير موريل!
لا تنس أن تطبخ المزيج المنقوع بعد ذلك. يُطهى في الماء المغلي لمدة 10 دقائق.
صفيها جيدًا وقطعيها إلى قطع.
ضعي 15 جرامًا من الزبدة (من 30) في مقلاة وقم بتحمير التوت على نار خفيفة. ملح وفلفل خفيف.
بمجرد أن يبدأ اللون البني ، أطفئي النار واتركيها جانبًا.
ضعي 15 جم المتبقية من الزبدة وزيت الزيتون في قدر ، وحمّري الكراث المفروم ناعماً على نار خفيفة.
لا تدع اللون البني ، فقط قم بتطوير الروائح. أضف الأرز. تخلط جيدا لتغطي جميع حبات الدهون.
صب النبيذ الأبيض. يُمزج جيدًا ، ثم يمتص الأرز كل السائل بسرعة.
يقلب جيدًا دائمًا على نار خفيفة.
ثم أضف مغرفة كبيرة من مرق الموريل. نخلط جيداً ونترك الأرز يمتص السائل. هناك أشخاص يضيفون كل المرق مرة واحدة ، لكني أفضل تناولها في مغارف وترك الأرز يمتص العصير برفق أثناء مروره. تخلط بملعقة من وقت لآخر لمنع القاع من الالتصاق.
بينما يغلي الأرز على نار هادئة ، ابشر البارميزان الطازج.
استمر في سكب العصير وترك الأرز يمتص.
بمجرد أن يشرب الأرز كل المرق ، اسكب جبن البارميزان. نحن الآن في طريقنا إلى “العناية” !! مما يعني أننا سنزبد الريزوتو بالزبدة! ولكن هناك ، ستكون الدهن جبن البارميزان. قلّب الأرز جيدًا في هذا الوقت لدمج جميع أنواع الجبن. تتم هذه العملية عادة بملعقة خشبية بها ثقب.
أضف المزيد أثناء الخلط.
وأخيرا ، الثوم المعمر المفروم.
قدميها على الفور لأن الريزوتو لا ينتظر! تؤكل ساخنة.
