أقدم هنا وصفة للسمبوسة. هذه هي النسخ الأصلية من الهند وهي مصنوعة من عجينة “محلية الصنع” ، على عكس السمبوسة Reunionese المصنوعة من صفائح من الطوب (سنراها في المستقبل القريب!). هذه السمبوسة مناسبة للنباتيين وتأتي مع صلصة بسيطة ولذيذة حقًا مصنوعة من التمر الهندي والتوابل.
وصفة سمبوسة البطاطس:
عجين:
– 500 جرام طحين
-4 ملاعق كبيرة زبدة مصفاة (سمن)
اتصال مزعج:
-3 ملاعق كبيرة الى حساء الزيت
-2 ملاعق كبيرة بذور الكزبرة
-1 ملعقة كبيرة من بذور الكمون
-1 ملعقة صغيرة من جارام ماسالا
-1/2 ملعقة صغيرة بابريكا
-1/2 ملعقة صغيرة من مسحوق الكركم
-650 جرام بطاطس مقشرة ومطبوخة
-1 بصلة
-2 فصوص من الثوم
-2 أو 3 فلفل أخضر أو أحمر طائر
-100 جرام بازلاء مجمدة
صلصة التمر الهندي: -130 جرام شجر بني – 70 جرام من مركز التمر الهندي -2 ملاعق صغيرة من جارام ماسالا -2 ملاعق صغيرة من الكمون المطحون
ابدأ بتحضير العجين. نضع الدقيق والزبدة المصفاه (السمن في محلات البقالة الهندية) في وعاء الخلاط.
قم بتشغيل الروبوت وأضف الماء. فقط ما يكفي لتشكيل العجين. كل هذا يتوقف على امتصاص الدقيق! لذلك من الضروري سكب الماء بقطر!
اعجن لمدة عشر دقائق ثم أعد العجين إلى شكل كرة. اتركيه للراحة أثناء تحضير الحشوة.
ضعي البطاطس على البخار (مقشرة ومقطعة إلى قطع ، ستصبح أسرع) أو في الماء. يجب أن تظل البطاطس صلبة. في غضون ذلك ، تحضير المكونات الأخرى.
نضع الزيت في مقلاة على نار خفيفة ونضع بهارات الهاون وتلك الموجودة في البودرة.
دع الطبخ دقيقة أو دقيقتين ، حتى تظهر رائحة قوية (احرص على عدم ترك كل شيء يحترق !!).
يُضاف البصل المقطّع إلى قطع صغيرة ويُطهى لمدّة دقيقتين أو ثلاث ثم تُضاف البطاطس المطبوخة مسبقًا.
اخلطي جيدًا وأضيفي الثوم المهروس والبازلاء المجمدة والفلفل (مع قفازات اللاتكس !!) وقطعيها إلى قطع صغيرة.
ملح وفلفل. اتركيه ليطهى لمدة 5 دقائق مع التحريك بانتظام. يُسكب كل شيء في وعاء كبير ويُهرس جزئياً باستخدام هراسة البطاطس.
انتهى المزحة.
ضع العجينة على سطح عمل مطحون. خذ كرة بحجم البيضة ، ولفها جيدًا بين يديك ثم افردها على الطاولة.
افردي هذه القطعة من العجين في شكل دائرة رفيعة إلى حد ما. إنها رقة العجين التي ستعطيها مظهرها “الشمباني” !! قطع بسكين في منتصف الدائرة.
مرر القليل من الماء (بإصبعك) على الحافة اليمنى من الداخل من نصف الدائرة. أضعاف في النصف ، الإلتصاق كما في الصورة.
نحصل على نوع من المخروط. املأها بحشوة البطاطس قدر الإمكان. خذ البوق كما في الصورة أدناه ، انضم.
ثم ينحني أفقياً ويمرر القليل من الماء قبل ذلك بإصبعك … افعل الشيء نفسه مع باقي العجين والحشو.
ضعي مقلاة زيت على النار. يجب أن يكون الزيت ساخنًا جدًا. تقلى السمبوسة حتى تكتسب لونا بنيا ذهبيا وتغمر!
تحضير الصلصة عن طريق وضع السكر والتمر الهندي المركز والبهارات في وعاء. تخلط جيدا وتوضع في الميكروويف لمدة دقيقة واحدة. أو نضع كل شيء في قدر ونغلي ثم نرفع عن النار.
انتهى!! كل ما تبقى هو غمس السمبوسة بسخاء في الصلصة اللذيذة!
