لقد عدت للتو من رحلة صغيرة إلى إيطاليا وأنا أيضًا في الجزء الرئيسي من كتابي الذي سيصدر في مارس والذي سأخبرك بكل شيء عنه قريبًا. لذا فقد تركني ذلك وقتًا أقل للنشر ، حتى لو تراكمت الأفكار! هنا sbrisolona الذي يأتي إلينا من لومباردي واسمه مشتق من كلمة “brisa” التي تعني الفتات. كما ستفهم ، إنه نوع من الفطيرة الحلوة الكبيرة التي يتم تقسيمها إلى قطع ومشاركتها. إنه حقًا لذيذ لتناول الوجبات الخفيفة. يحتوي على اللوز والليمون والقليل من الفانيليا وخاصة دقيق الذرة الذي يجلب ملمسًا مقرمشًا. لقد أجريت بعض الاختبارات في ورشة العمل الخاصة بي لأعطيك الإصدار الذي يعجبني!
Recette pour deux “sbrisolona”:
60 غ من اللوز الخام مع القشرة
140 جرام سكر
110 جرام زبدة غير مملحة في درجة حرارة الغرفة
50 جرام دقيق ذرة ناعم
190 جرام طحين
25 جرام من صفار البيض
نكهة نصف ليمونة
قليل من الملح
عدد قليل من اللوز للزينة
Instructions :
ضع اللوز في خلاط صغير لعمل مسحوق خشن.
ضعي الزبدة والسكر واللوز في وعاء محضر الطعام أو في وعاء.
امزج مع محضر الطعام أو أطراف أصابعك.
أضيفي باقي المكونات واخلطي حتى تحصلي على عجينة شديدة التكتل.
يبدو قليلا مثل تفتت تتصدر.
ضع دائرة بقطر 20 سم على صفيحة خبز مبطنة بالورق أو بساط سيليكون. نضع نصف العجينة في الدائرة (سنصنع اثنين) ثم نعبئها برفق دون الإصرار. ثم نضع بعض اللوز فوقها.
اخبز لمدة 25 دقيقة على 170 درجة مئوية. يجب أن يكون الجزء العلوي ذهبي اللون.
افعل نفس الشيء مع الفطيرة الثانية. للاستمتاع بها مبردة. سيكون عليك ببساطة كسرها يدويًا لمشاركتها.
