إليكم وصفة لذيذة لتارت تاتان مع الكراث قدمها لي صديقي غاييل، عازف البيانو والطاهي الممتاز. شغفان جمعنا معاً في صداقة جميلة. أعدت لي هذا الطبق لحفل عشاء ووافقت على الفور على مشاركة أسرارها الصغيرة. تأتي المتعة الكبيرة في إعداد هذه الوصفة من طهي الكراث. تُعد الرائحة إضافة رائعة للمطبخ، وتعد بطبق غني بالنكهة والقوام! هذا التاتان اللذيذ مثالي مع سلطة خضراء لذيذة!
وصفة لصنع تارت تاتان بحجم 20 سم (يقدم 4 أشخاص) :
1 كغم من الكراث
50 جرام زبدة نصف مملحة
2 ملاعق كبيرة زيت زيتون
1 ملعقة كبيرة خل عصير التفاح أو خل الكراث
1 ملعقة طعام من الخل البلسمي أو صلصة ورشيسترشاير
1 ملعقة صغيرة سكر
أعشاب بروفانس
ملح فلفل
150 غ من جبن الماعز الطازج (مثل بيتي بيلي أو شافرو)
350 جرام من عجين الفطير بالزبدة النقية (صنعتُ عجين الفطير من الصفر)
ابدأ بتقشير الكراث دون تقطيعه إلى قطع.
ضعي الزبدة وزيت الزيتون في مقلاة على نار معتدلة.
يُضاف الكراث ويُطهى برفق.
يُحرّك بلطف من وقت لآخر. عندما يبدأ الكراث في التحول إلى اللون البني، اخفضي الحرارة وغطيه بغطاء.
يُترك ليطهى لمدة 20-25 دقيقة مع مراقبته والتحريك من وقت لآخر. يُضاف خل عصير التفاح أو خل الكراث والخل البلسمي أو صلصة ورشيسترشاير والسكر والملح والفلفل.
يُترك لينضج مع التحريك برفق بينما تستمتع بالرائحة الشهية! لا تتردد في إضافة القليل من أعشاب البروفانس.
عندما ينضج الكراث، ضعي أفضلها في صينية مقاس 20 سم مبطنة بورق مقاوم للدهون.
ثم أضيفي بقية الكراث الأقل جاذبية وكل شيء آخر في المقلاة.
توضع قطع جبن الماعز الطازج فوق الكراث.
تُفرد عجين الفطير على سطح عمل مرشوش بالدقيق.
تُقطّع المعجنات بالسكين، باستخدام دائرة أو طبق أكبر من القالب، حوالي 22 سم أو أكثر (لا تقطع بدفع الدائرة أو الطبق إلى الداخل، فقط اقطع بالسكين).
تُوخز المعجنات بالشوكة.
توضع المعجنات في الصينية فوق الكراث.
يُخبز الفرن لمدة 40 دقيقة في فرن مُسخّن مسبقاً على حرارة 190 درجة مئوية على مروحة مدعومة بمروحة.
Commencez par éplucher les échalotes sans les couper en morceaux.
Mettez le beurre et l’huile d’olive dans une poêle sur feu modéré.
Ajoutez les échalotes et faites cuire doucement.
Mélangez délicatement de temps en temps. Quand les échalotes commencent à dorer, baissez le feu et mettez un couvercle.
Laissez cuire 20-25 minutes, tout en surveillant et en mélangeant de temps en temps. Mettez alors le vinaigre de cidre ou d’échalote, le vinaigre balsamique ou la sauce worcestershire, le sucre, le sel et le poivre.
Laissez cuire toujours en mélangeant délicatement, tout en profitant de la bonne odeur ! N’hésitez pas à ajouter un peu d’herbes de Provence.
Quand les échalotes sont bien cuites, posez les plus belles dans un moule de 20cm garni de papier sulfurisé.
Ajoutez ensuite le reste des échalotes moins jolies et tout ce qu’il y a dans la poêle.
Mettez le chèvre frais en morceaux sur le dessus des échalotes.
Étalez la pâte feuilletée sur un plan de travail fariné.
Coupez la pâte au couteau en prenant un cercle ou une assiette plus grande que le moule, environ 22cm ou plus (ne coupez pas en enfonçant le cercle ou l’assiette, mais bien avec le couteau).
Piquez la pâte à la fourchette.
Placez la pâte sur le moule au dessus des échalotes.
Faites cuire 40 minutes dans un four préchauffé à 190°C sur chaleur tournante.
