تم تطوير طريقة طهي الكركند هذه من قبل والديّ منذ ما يقرب من 50 عامًا … من الواضح أن لدي شيئًا لأتمسك به ، لأنهم أجروا العديد من التجارب في ذلك الوقت للعثور على الوصفة التي تناسبهم أكثر. لذوقهم بالطبع. وبما أن هذا الأخير لم يتغير أبدًا وأنا أعترف أنني أفهم السبب. النكهات مدهشة ومع ذلك يتم إخفاء الأفضل. الصلصة التي تبدأ بالكراميل في وعاء التقطير تحت الكركند هي ببساطة رائعة بقطعة خبز بسيطة. في 25 دقيقة كل شيء جاهز. وصفة مثالية لطبق احتفالي أو لوجبة فاخرة تفوح منها روائح عطلات!

2 كركند من 1 كجم إلى 1.4 كجم لكل منهما
زبدة نصف ملح
ملح فلفل
أعشاب بروفنسال
لتحضير الصلصة:
50 جرام زبدة مملحة
منفذ 50 جرام
100 جرام كريمة سميكة
استعاد عصير الجرادتين بعد تقطيعهما
80 مل أرماجناك من أجل اللهب
إليكم الكركند الذي اشتريناه من مصايد الأسماك بجوار منزل والديّ في بريتاني!
يحرق كل منهم 3-4 دقائق في الماء المغلي. ستلتقط الجسد قبل تقطيعه إلى نصفين. اسأل بائع السمك إذا كان لديه الجهاز لقتل الكركند عن طريق الصدمة الكهربائية.
قفز بعد هذا الطهي الزائف السريع ، لا ينضج اللحم ، بل يحرق فقط.
كسر المخالب بمطرقة (لتتناولها بسهولة أكبر لاحقًا). تخلص من الأربطة المطاطية.
ضع الكركند على ظهره على لوح التقطيع.
ضع سكينًا قويًا في منتصف الكركند واضغط برفق بمطرقة لتقطيعه إلى نصفين.
سيكون قطع الذيل أسهل بدون المطرقة.
وها أنت ذا. اجمع عصير الكركند جيدًا في قدر. افعل الشيء نفسه بالنسبة للكركند الثاني.
ضعها بشكل مسطح على صينية التنقيط في الفرن.
قشر اللحم من الذيل برفق.
ثم ينزلق قطعة من الزبدة المملحة بين القشرة واللحم.
افعل هذا على كل الكركند ثم ضع المزيد من الزبدة على السطح.
نعم نعم إنه دهني ولكنه جيد للغاية !! أضف الملح والفلفل.
رشي القليل من Herbes de Provence. لا تضع الكثير!
ضع في فرن مسخن مسبقًا على حرارة 250 درجة مئوية في فرن حراري مع شواية متزامنة إذا أمكن ، لمدة 10 دقائق.
في هذه الأثناء ، صفي العصير الذي تم جمعه من خلال منخل ناعم في قدر.
أضف الزبدة.
ميناء.
و قشطة طازجة.
يُغلى المزيج على نار خفيفة. ثم توضع جانبا.
أخرج الكركند بعد 10 دقائق من الطهي.
رشهم بالصلصة. لا فائدة من سقي المخالب ، تفضل الرأس والذيل.
يُعاد إلى الفرن لمدة 7-8 دقائق أعلى في الفرن. يُسكب أرماجناك في قدر صغير ويُسخن برفق على نار خفيفة.
عندما يصبح الكركند جاهزًا ، أخرجه من الفرن. ضعي النار في قدر صغير من أرماجناك.
تصب على السطح بالكامل. كن حذرًا ، لأنه سيكون هناك نار في كل مكان. لكنها ليست قاذفة لهب أيضًا !! لذلك لا تقلق ، لا يوجد شيء معقد هنا !! إنه مثل كريب فلامبي …
وها أنت ذا !! يمكنك إعادة وضعه في الفرن لمدة دقيقتين فقط لتكرمل الصلصة قليلاً في مقلاة التنقيط!
قدميها على الفور مع الخبز فقط. عليك أن تأكل كل ما تستطيع. الطعم مذهل للغاية. لكن الأفضل في المقلاة: الصلصة الغنية بالزبدة! سوف تصاب بالجنون! في المنزل أصبحنا في منتصف العمر في طريقتنا في تناوله: نضعه في كل مكان ونأكل كل ما نستطيع ، خاصة في رأس الكركند !!
