رأيت هذه الأنابيب في Mamá Framboise في مدريد (موقعهم هنا !) وقد فتنت على الفور. رغبة واحدة فقط: لدغة فيها! لقد صنعتها كما اعتقدت أنه يمكن القيام بها. لا يوجد قالب موجود لذلك ، لذلك ذهبت إلى متجر DIY ، وبأقل من 20 يورو ، حصلت على ما يلزم ليخبز عجين الفطير في شكل أنبوب مثالي! التناقض بين عجين الفطير بالكراميل ، حلوى البندق اللذيذة قليلاً والشوكولاتة هو إدمان تمامًا وهو حقًا جيد جدًا !!
70 جرام من كريسبيرلز (كرات صغيرة من الكوكيز مغطاة بالشوكولاتة) في الشوكولاتة الداكنة أو شوكولاتة الحليب
قم أولاً بإعداد عجين الفطير المقلوب (انظر الوصفة هنا !). إنه أبسط بكثير مما تعتقد!
ثم اصنع حلوى البندق. صب السكر في مقلاة كبيرة.
أضف القليل من الماء فقط لنقع السكر.
عندما يغلي السكر في فقاعات كبيرة ، أضيفي البندق.
ثم تخلط جيدا وتترك للرمل ثم تتكرمل. أدعوكم لمشاهدة العملية برمتها لفهم كل شيء بشكل كامل. كل شيء هنا !
اسكبيها على ورقة زبدة أو حصيرة سيليكون.
نضع في الخلاط للحصول على عجينة سائلة. صب حلوى البرالين في كيس مواسير مزود بفوهة 6 مم.
افردي عجينة البف بسمك 4 مم.
هذه هي المادة المستخدمة في صناعة الأنابيب. أخذت كل شيء من ليروي ميرلين. أخذت أنابيب الألومنيوم المستديرة والمربعة (خاصةً غير المجلفن الذي سيصدأ في استخدام واحد). انتقل إلى قسم الأدوات. هناك أنابيب بطول متر واحد. يمكنك أن تطلب قطعها في 4 أنابيب طولها 25 سم (أو في 5 من 20)
سواء كنت تأخذ شكل دائري أو مربع ، فستحتاج إلى قطر صغير وأكبر.
بالنسبة للدائرة ، أخذت أنبوبًا صغيرًا يبلغ قطره 1 سم وأنبوبًا أكبر يبلغ 2.4 سم.
للمربع: 8 مم و 2.4 مم.
يجب أيضًا أن يكون من المنطقي لك ترك مساحة لطهي المعجنات المنتفخة.
على أي حال ، خذ الألمنيوم واقطعه بدقة. قد تحتاج إلى ملف في القواطع. لكن بالنسبة لمجموعة من الأنابيب المستديرة ، حصلت عليها مقابل 20 يورو تقريبًا. نفس الشيء بالنسبة للمربعات ، لكنك لست بحاجة إلى كليهما!
خذ أنبوبًا رفيعًا ستقوم بدهنه برذاذ تحرير العفن. يجب أن يكون الأنبوب أطول بقليل من العجين. إذا لزم الأمر ، قطع عجين الفطير لتناسب.
لف الأنبوب قليلاً فوق العجينة. عندما تتداخل بمقدار 5 مم على كامل الطول ، اقطع العجينة واضغط على الأنبوب جيدًا لإغلاق العجينة من الأعلى إلى الأسفل. افعل نفس الشيء لجميع الأنابيب الطرفية.
دحرج العجينة في السكر البودرة واضغط على الفائض.
ثم لف العجينة بورق زبدة مقطعة حسب الحجم.
ضع كل شيء في الأنبوب الكبير. قد تحتاج إلى العودة وشد الأنبوب الورقي بإحكام. بعد 2 ، ستحصل على تعليق منه. إذا لم يكن مناسبًا حقًا ، فقد يكون هناك الكثير من الخليط. سيكون من الضروري فتح وقطع شريط صغير من أعلى إلى أسفل.
وهذه هي النتيجة. لقد صنعت عدة دفعات ، لذلك سيكون لديك بسهولة 8 أنابيب بحجم 25 سم.
اخبزيها لمدة 35 دقيقة عند 190 درجة مئوية. نخرج أنابيب العجين.
أزل ورق الزبدة.
ثم الأنابيب الداخلية. افعل هذا برفق.
اتركه ليبرد ثم املأه بالكراميل باستخدام كيس الأنابيب ، وللقيام بذلك ، ضع الأنابيب عموديًا ثم املأها من الأعلى. سوف تتدفق حلوى البرالين في الأنبوب. يمكنك قلبهم لملء كلا الجانبين. سوف يخرج البرالين قليلاً من الأنابيب ، لكن لا شيء خطير!
قم بتلطيف الشوكولاتة (انظر الطريقة هنا ). أسكبها عندما تكون درجة الحرارة المناسبة ، حوالي 31 درجة مئوية ، في قالب الكعكة. إنه أكثر ملاءمة لغوص الأنابيب.
اغمسها في الشوكولاتة ثم أزل الفائض. ثم ضعيها على ورق الزبدة.
اتركيه ليبرد لمدة 5 دقائق ، ثم أضيفي الكريسبيرلز. إذا وضعتها بسرعة كبيرة ، بعد حمام الشوكولاتة مباشرة ، ستنزلق اللآلئ على الشوكولاتة السائلة جدًا.
ثم اتركها لتبرد تمامًا في درجة حرارة الغرفة واحفظها في حاوية محكمة الإغلاق. ليس عليك وضعها في الثلاجة. استمتع بها في غضون 3 أيام!
