هذا الآيس كريم اللذيذ اللذيذ مرحب به في وقت الحلوى للانتعاش في الصيف أو الراحة في الشتاء! نسخة شخصية من هذه الكلاسيكية الرائعة ، هذه الوصفة يهدف بلا شك إلى أصحاب الآلات السعداء بوظة!
وصفة لـ “آيس كريم البرالين”:
-150 جرام من برالين (50٪ لوز / 50٪ بندق) – 30 جرام حليب بودرة – 140 جرام سكر -4 صفار بيض – 500 مل حليب -3g من العدلات الفائقة – 170 جم كريمة سائلة كاملة
ابدأ بصنع عجينة حلوى البرالين (وصفة هنا ) مع 50٪ لوز و 50٪ بندق (حتى مع القشرة!). ضعي نصف كمية السكر (70 جم) مع الصفار واخلطيهم بسرعة (لا داعي للسلق في هذه الوصفة).
أضف النيوتروز الفائق (مثبت شربات).
ومعجون البرالين.
في قدر ، سخني الحليب ومسحوق الحليب والسكر المتبقي على نار خفيفة.
عندما يغلي الحليب ، اسكبه أثناء الخفق على مزيج الصفار / السكر / البرالين.
يُعاد إلى درجة حرارة منخفضة ويُطهى مثل الكاسترد ، ليصل المزيج إلى 85 درجة مئوية.
عند الوصول إلى درجة الحرارة المرغوبة ، أضيفي الكريمة الكاملة الباردة بعيدًا عن الحرارة لإيقاف الطهي.
اتركيه ليبرد ثم احفظيه طوال الليل في الثلاجة. في اليوم التالي ، اخفقي المزيج بقوة شديدة ، أو حتى باستخدام خلاط الغمر وضعيه في التوربينات. صانع الآيس كريم أو الآيس كريم.
