اقتربت عطلة عيد الميلاد وأردت أن أقدم لكم وصفة لحم الضأن. أعطيك ما لدي من نافارين مع العسل والبرتقال وتوابل عيد الميلاد والجزر والبطاطا الحلوة. إنه لذيذ ويكاد يشبه الطاجين! يجب القول أن هناك العديد من أوجه التشابه بين نافارين والطاجين وهنا أضع بهارات عيد الميلاد ، وهي القرفة واليانسون والفلفل والقرنفل. لقد تركت الزنجبيل عمدا. هذا يعطي طبقًا مريحًا تفوح منه رائحة المنزل ، وستحصل على لحم طري ولذيذ حسب الرغبة. وبالطبع سأقدم لك قريبا نافارين كلاسيكي أكثر!
تكفي 8 أشخاص:
2 كجم عظم الكتف أو الساق
2 ملاعق كبيرة زيت زيتون
2 عود قرفة
2 نجمة يانسون
2-3 فصوص
500 مل عصير برتقال طازج
2 ملاعق كبيرة من العسل
1 بطاطا حلوة كبيرة
دزينة من الجزر
قشر اثنين من البرتقال العضوي
ملح فلفل
نقطع اللحم إلى قطع. أولاً على شكل شرائح ، ثم على شكل قطع كبيرة.
ضعي في قدر كبير مع زيت الزيتون على نار عالية إلى حد ما ولون بني مع التحريك بانتظام.
أضيفي القرفة واليانسون النجمي (الينسون) والقرنفل.
أضف أيضا عصير البرتقال.
ثم نسكب الماء ليغطي اللحم جيداً. أضف الملح والفلفل.
ضعي الغطاء ثم اطهيه لمدة ساعتين ونصف (بدون الضغط إذا كان لديك قدر ضغط) على نار خفيفة: يجب أن يكون هناك غليان خفيف. بعد وقت الطهي ، تحقق من طراوة اللحم. يجب أن تكون لينة جدا. وإلا استمر في الطهي.
عندما ينضج اللحم جيدًا ، أخرجه من المقلاة وجففه جيدًا.
ثم يضاف العسل.
قشر الجزر.
نقطعها إلى قطع ونضيفها إلى المرق.
نتركها تنضج لمدة 20 دقيقة ثم نرفعها ثم نضيف البطاطا الحلوة مقشرة ومقطعة إلى قطع.
اترك البطاطا الحلوة تنضج لمدة 15 دقيقة ، ثم أزلها عندما تنضج جيدًا. دع العصير ينخفض للحصول على تناسق أفضل. عندما يصبح العصير أكثر سمكًا قليلاً ، أضيفي اللحم والجزر والبطاطا الحلوة وأخيراً أضيفي نكهة البرتقال العضوي.
Coupez la viande en morceaux. D’abord en tranches, puis en gros morceaux.
Mettez dans une grande cocotte avec l’huile d’olive sur feu assez fort et faites colorer en mélangeant régulièrement.
Ajoutez la cannelle, l’anis étoilé (la badiane) et les clous de girofle.
Versez également le jus d’orange.
Versez ensuite de l’eau pour bien couvrir la viande. Salez et poivrez.
Mettez un couvercle puis laissez cuire 2h30 (sans mettre la pression si vous avez la cocotte minute) sur feu doux : il doit y avoir une légère ébullition. Au bout de temps de cuisson, vérifiez la tendreté de la viande. Elle doit être très moelleuse. Sinon poursuivez la cuisson.
Quand la viande est bien cuite, retirez-la de la cocotte en l’égouttant bien.
Ajoutez alors le miel. Épluchez les carottes, coupez-les en morceaux et ajoutez-les dans le bouillon.
Laissez cuire 20 minutes, retirez-les puis ajoutez la patate douce épluchée et coupée en morceaux.
Laissez cuire la patate douce 15 minutes, puis quand tout est bien cuit, retirez-la. Laissez réduire le jus pour avoir une meilleure consistance. Quand le jus est un peu plus épais, remettez la viande, les carottes, la patate douce et ajoutez enfin le zeste des deux oranges bio.
