الوصفة الأخيرة لشراكي الصيفي مع ألفالي! مع هذا ، اخترت عن قصد مزج نكهات ثلاث دول عزيزة على قلبي: سويسرا مع الإيمنتال ، والبرازيل مع كرات الجبن (في البداية “bolinhos de queijo”) وإسبانيا مع هذا القلي اللذيذ بزيت الزيتون. النتيجه هي مثير: كرات اللحم المقرمشة والذهبية والممتلئة مع جبنة ذائبة وسائلة بالداخل! منحلة بالتأكيد ، ولكن الجشع جدا … بعد كل شيء ، أنا أعتني بفئة الذواقة من Alvalle بكل سرور! لنفترض 100٪ ونلتهم هذه العجائب الصغيرة دون تردد!
وصفة لأربعة أشخاص:
– طوبة من الفالي شوربة جزر بارد وبرتقال وكزبرة
– 750 مل ماء
-2 مكعبات مرقة خضار أو دواجن أو 50/50
– 50 جرام زبدة نصف مملحة
-460 جرام طحين
-250 جم جبن إيمنتال
-1 بيضة
– فتات الخبز
– زيت زيتون للقلي
نضع الماء ليغلي مع المكعبات والزبدة شبه المملحة.
عندما يغلي السائل ، أضيفي الدقيق دفعة واحدة.
يُرفع عن النار ، ويُخلط المزيج جيدًا بملعقة خشبية ، ثم يُعاد إلى درجة الحرارة المنخفضة. مع الاستمرار في التحريك ، اطهي العجينة لمدة دقيقتين أو ثلاث دقائق كما هو الحال مع عجينة الشو.
العجين جاهز!
دون حرق نفسك ، حاول أن تعجن العجين. سوف يبرد بسرعة إلى حد ما ويصبح مرنًا وسلسًا عند اللمس.
نقطع الإيمنتال إلى مكعبات.
نأخذ كرة من العجين بحجم حبة الجوز.
احفر تجويفًا بإبهامك وقم بتوسيعه (كما لو كنت تصنع الفخار!) لوضع مكعب من Emmental هناك.
لف العجين حول الجبن.
ثم دحرج الكرة بين راحتي اليدين.
افعل نفس الشيء مع كل العجين.
يجب ألا يكون الجبن على سطح الزلابية وإلا سيتم فتحه عند القلي …
لف كرات اللحم في بيض مخفوق.
ثم في فتات الخبز.
تقلى كرات اللحم في مقلاة زيت زيتون ساخن جدا.
أنا أفضل القلي في طبخين. هذا يتجنب أي انفجار من الكريات. من الضروري أن تقلى للمرة الأولى حتى يكون لونها ذهبيًا ، ولكن قليلاً.
بعد هذا الحمام الأول ، عليك أن تتركهم يبردوا قليلاً (بينما تطبخ الدفعة التالية) ثم امنحهم حمامًا ثانيًا لمنحهم لونًا ذهبيًا لطيفًا. في الصورة أدناه: نرى الزلابية مع طهي واحد في الأسفل وتلك التي تطبخ في الأعلى!
