في مطعم ياباني صغير يعجبني حقًا ، Sake Lover (83 rue de Turbigo in Paris) الذي أعشقه ، الطعام تقليدي وستجد فقط أطباق ممتازة هناك. لقد استلهمت من حبوبهم التي لم أفشل أبدًا في التهامها عندما تكون في القائمة. كل شيء جاهز في 20 دقيقة. وتتكون الصلصة من السمسم طبعا والطحينة وزيت السمسم المحمص. ولكن أيضًا القليل من صلصة الصويا والميرين ، وهو مشروب معتدل جدًا للطهي يمكنك العثور عليه بسهولة في محلات البقالة اليابانية أو الغريبة أو الآسيوية ، ولكن أيضًا على الإنترنت.
لـ 4 أشخاص:
900 جم إلى 1 كيلو من الفاصوليا الخضراء الطازجة
لتحضير الصلصة:
50 جرام سمسم محمص
30 جرام طحينة
40 جرام ميرين
15 جرام صلصة الصويا
25 جرام ماء
1 إلى 2 ملاعق كبيرة ممتلئة بزيت السمسم المحمص
ملح
ساق الفاصوليا الخضراء وازل أي خيوط.
اغسلها ثم ضعها في سلة بخارية (الفولاذ المقاوم للصدأ سيكون على ما يرام!).
طهي على البخار لمدة 15 دقيقة مغطاة (فتحته لأريك!). بمجرد طهيها ، ضعها تحت الماء البارد حتى تبرد.
أثناء الطهي ، يمكنك صنع الصلصة. سحق بذور السمسم المحمص. لدي وعاء ياباني هنا ، لكن في خلاط صغير أو هاون كلاسيكي سيعمل أيضًا.
نضع البذور المطحونة مع الطحينة والمرين وصلصة الصويا والماء.
يُمزج جيدًا ويُسكب زيت السمسم المحمص.
ملح حسب ذوقك.
أضف الفاصوليا المبردة والمصفوفة جيدًا.
تخلط بعناية.
يمكنك تذوقها على الفور ، أو تذوقها باردة جدًا ، ولكن أيضًا فاترة إذا قمت بتسخينها لبضع ثوان في الميكروويف على سبيل المثال!

Dans un petit restaurant japonais que j’aime beaucoup, le Sake Lover (83 rue de Turbigo à Paris) que j’adore, la nourriture est traditionnelle et vous n’y trouverez que des plats excellents. Je me suis inspiré de leurs haricots que je ne manque jamais de dévorer quand ils sont à la carte. Le tout est prêt en 20 minutes. La sauce est composée de sésame bien sûr, de tahiné (la pâte de sésame) et d’huile de sésame grillé. Mais également un peu de sauce de soja et de mirin, un saké très doux pour la cuisine que vous trouverez facilement en épicerie japonaise, exotique ou asiatique, mais également sur internet.
Équeutez vos haricots verts en tirant les éventuels fils.
Lavez-les puis placez dans un panier vapeur (en inox ça fera très bien l’affaire !).
Faites cuire 15 minutes à couvert (là j’ai ouvert pour vous montrer !) à la vapeur. Dès la fin de la cuisson, passez-les sous l’eau froide jusqu’à ce qu’ils soient frais.
Pendant la cuisson, vous pouvez faire la sauce. Écrasez les graines grillées de sésame. J’ai ici un bol japonais, mais dans un petit mixeur ou un mortier classique, cela fonctionnera aussi.
Mettez les graines écrasées avec le tahiné, le mirin, la sauce de soja et l’eau.
Mélangez bien, versez l’huile de sésame grillé.
Salez à votre goût.
Versez les haricots refroidis et bien égouttés.
Mélangez soigneusement.
Vous pouvez dégustez immédiatement, ou les déguster bien frais, mais tiède également si vous réchauffez quelques secondes au four micro-ondes par exemple !
