أقدم لكم “سيو ماي” الشهيرة أو “شوماي” ، “شاوماي” ، “سيوماي” … هناك الكثير من الطرق للتهجئة والنطق. لكن هؤلاء من هذه الوصفة هي جزء من “ديم سوم” في منطقة كانتون و هونج كونج. وهي تختلف عن “سيو ماي” عن منطقة شنغهاي التي سنراها لاحقًا (والتي لها شكل مختلف وحشوة تحتوي على أرز لزج). توجد أيضًا في فيتنام والفلبين وإندونيسيا. يمكنك أن تفعل “siu mai” مع عدد لا نهائي من الاختلافات. أقدم لكم نوعين من الكلاسيكيات ، تلك التي تحتوي على لحم الخنزير والروبيان وتلك التي تحتوي على لحم الخنزير ولحم البقر. بالنسبة إلى Guangzhou (Canton) siu mai ، من الأفضل استخدام غلاف wonton. بالنسبة لأولئك القادمين من شنغهاي ، سنصنع عجينتنا “محلية الصنع” التي ستكون أكثر سمكًا قليلاً.
وصفة لـ 20 “سيو ماي” مع لحم الخنزير والقريدس:
-150 جرام من لحم الخنزير المفروم
– 125 جم روبيان نيء مقشر
– 100 غ من كستناء الماء
-3 ثوم المعمر الصيني
-1 ملعقة السكر
-1/4 ملعقة صغيرة زيت السمسم
-1 ملعقة صغيرة من صلصة المحار
-1 ملعقة صغيرة من صلصة الصويا الخفيفة
-2 ملاعق كبيرة ملعقة صغيرة من نبيذ الطبخ الصيني (15 درجة)
– 1 سم من الزنجبيل الطازج
– بطارخ القرم
-1 علبة من أغلفة فطيرة باللحم
وصفة لـ 20 “سيو ماي” مع لحم الخنزير ولحم البقر:
-150 جرام من لحم الخنزير المفروم
-125 جرام شريحة لحم مفروم بنسبة 20٪
– 100 غ من كستناء الماء
– 50 جرام فطر أسود
-3 ثوم المعمر الصيني
-1 ملعقة السكر
-1 + 1/2 ملعقة صغيرة من نشا الذرة أو نشا التابيوكا
-1/4 ملعقة صغيرة زيت السمسم
-1 ملعقة صغيرة من صلصة الصويا الخفيفة
-1 ملعقة صغيرة من صلصة المحار
-2 ملاعق كبيرة ملعقة صغيرة من نبيذ الطبخ الصيني (15 درجة)
– 1 سم من الزنجبيل الطازج
– 20 بازيلاء مجمدة
-1 علبة من أغلفة فطيرة باللحم
بالنسبة لأولئك الذين لا يعرفون كستناء الماء ، أقدم هنا صورة من القصدير … لم أجدهم طازجًا أبدًا … حتى في الصين.
يجب عليك تصريفها جيدًا ثم تمريرها في الماء البارد لإزالة كل العصير من الصندوق. ثم قم بتجفيفها جيدًا ومررها من خلال منشفة ورقية. قطعها إلى قطع صغيرة (ليس في الخلاط من فضلك !!).
جفف الجمبري جيداً وقطّعه إلى قطع صغيرة.
تحضير المكونات الأخرى ، مثل البصل الأخضر ، مع الاحتفاظ بجزء أخضر فقط (تقريبًا أبيض مثل الأخضر …).
يقشر الزنجبيل ويقطع إلى قطع صغيرة.
بالنسبة لـ “سيو ماي” مع القريدس ولحم الخنزير ، ضعي جميع المكونات في وعاء.
وتخلط بقوة حتى تتكتل جميع المكونات. يجب أن تخلط لمدة دقيقتين دون توقف.
لمن لديهم لحم البقر ولحم الخنزير ، تابع بنفس الطريقة ، دون أن ننسى نشا الذرة …! لأن لحم البقر يصنع عصيرًا أكثر من الروبيان و نشا الذرة سيحفظ كل شيء! يمكنك أيضًا إضافة 50 جرامًا من الفطر الأسود إذا كنت ترغب في ذلك.
تخلط جيدا لمدة دقيقتين أيضا.
أخرج أوراق الطن (فهي عملية للغاية لدرجة أنني لا أرى فائدة من صنع العجين بنفسك وجميع الصينيين افعلها بهذه الطريقة…).
اقطع حواف الأوراق بسكين للحصول على دائرة (تقريبًا !!).
ضعي ملعقة صغيرة من الحشوة في وسط دائرة العجين.
وتغلق الحواف باتجاه الحشوة ، وتتركها ظاهرة.
للوصول إلى Formdu siu mai مع الحشو بالارض من الأعلى. إنها في الواقع أسطوانة صغيرة …
لمن لديهم لحم بقري ، ضعوا البازلاء (المجمدة مثالية!) في وسط الحشوة.
ورأس سكين من بيض القريدس لمن لديهم قريدس.
وبهذه الطريقة يستحيل عدم التمييز بينها بمجرد طهيها!
ضعهم في سلال من الخيزران للتبخير.
وضعيها فوق قدر من الماء المغلي لمدة 12 دقيقة.
نصيحة برنارد: إذا وضعت سلتين كما هو الحال بالنسبة لي في الصورة ، ضع 6 دقائق ثم اعكس ترتيب السلال واطبخها مرة أخرى لمدة 6 دقائق. بهذه الطريقة سيتم طهي كل “سيو ماي” بشكل مثالي ، لأن السلة أعلاه تميل إلى طهي أقل قليلاً من السلة الموجودة أدناه.
بعد 12 دقيقة ، يصبح جاهزًا!
أن تستمتع بها كما هي أو مع صلصة مصنوعة من صلصة الصويا والخل وزيت السمسم الحار.
