ننسى النوكي الصناعي (الذي يمكن أن يكون جيدًا جدًا!) ، هذه النوكي الطازجة المصنوعة منزليًا تذوب في فمك … طعم رقيق ، مخملي ، “دائري”! إنه مثل المخمل! عجب بسيط. أعطيك القليل من النصائح لتحضيرها مسبقًا وأيضًا وصفة للنيوكي مع الثوم الناعم والقشدي وكريمة البارميزان. لقد بحثت عن صيغة الجمع gnocchi (التي هي بالفعل صيغة الجمع بالإيطالية) وقمنا بإضافة حرف “s” بالفرنسية ، لذا gnocchi.
وصفة جنوكتشي لأربعة أشخاص:
-1 كيلو دقيق بطاطس
-300-350 جرام دقيق
– 1 بيضة + 1 صفار
-2 ملاعق كبيرة زيت زيتون
اطهي البطاطس على البخار.
دعهم يبردوا ثم قشرهم.
سحقهم للحصول على هريس.
أضف ملعقتين كبيرتين من زيت الزيتون.
ثم البيض والصفار.
أضف الدقيق في المطر.
خلط جيد. العجين لزج تمامًا لكن هذا طبيعي تمامًا. كلما أضفت المزيد من الدقيق ، كلما كانت العجينة أكثر صلابة ، لكن أقل جودة بعد الخبز!
نطحن سطح العمل ، نأخذ ربع العجينة ونغلفها جيداً بالدقيق.
افردي العجينة في نقانق قطرها 2 سم.
قطع القطع بسكين.
تدحرج على شكل كرة ثم دحرجها على لوح النوكي أو بالشوكة.
للحصول على القليل من النوكي.
افعل نفس الشيء مع كل العجين.
يُطهى في قدر كبير من الماء المغلي المملح. بمجرد ظهورهم على السطح ، أخرجهم من الماء.
نصيحة من برنارد: أطبخ جنوكتشي مسبقًا بكميات صغيرة وبمجرد أن ترتفع إلى السطح ، أضعها في الماء البارد لإيقاف الطهي ، ثم أقوم بإعداد الصلصة بشكل منفصل والتي أضفتها في اللحظة الأخيرة. قد يكون هذا ممتعًا أثناء تناول العشاء مع الضيوف!
أقدم هنا وصفة مصنوعة “على الأنف” والتي تبين أنها ممتازة وفازت بكل النجاحات. لا توجد صورة!

-2 ملاعق كبيرة زيت زيتون
-4 فصوص ثوم مفرومة ناعماً
-250 جم كريمة ثقيلة
– 30 جرام جبن بارميزان مبشور طازج
-2 مكعبات “ماجي”
– فلفل أسود وجوزة الطيب
حضّر النوكي واطبخها ، ثم اغمرها في الماء البارد واتركها جانبًا.
سخني زيت الزيتون في مقلاة وأضيفي الثوم المفروم. بمجرد أن يكتسب اللون ، أضيفي الكريمة ومكعبات “ماجي”. ابشر البارميزان واتركه يثخن. الفلفل ، أضيفي جوزة الطيب وبمجرد أن تصبح الصلصة لذيذة (!!) ، أضيفي النوكي. اطبخي لمدة 3 دقائق وقدميه على الفور!
