ها هي الجدة كوكو تعود !! بعد دجاجه ياسا ، أقدم لك وصفة الباستيل التي صنعناها معًا. لحظة رائعة لمشاركة شغف الطهي مع خبيرة في مطبخ بلدها: السنغال. شكراً مرة أخرى لمامي كوكو لمشاركتها وصفتها. يمكنك تحضير الباستيل مقدمًا وحتى تجميدها ، ثم إعادة تسخينها في الفرن للحصول على فاتح للشهية ملون! المشكلة أنك عندما تبدأ لا تريد أن تتوقف !!

وصفة مامي كوكو باستيل:
عجين:
– 500 جرام دقيق T55
-1/2 ملعقة صغيرة بيكنج بودر
-1 ملعقة صغيرة من مسحوق الكركم -1 نصف ملعقة صغيرة ملح
– 30 جرام سمن
– 10 جرام زيت زيتون
-1 بيضة
– 190 مل ماء
حشوة اللحم البقري: -2 ملاعق كبيرة زيت
-350 جرام لحم بقري مفروم
-2 بصل
-1 فلفل أحمر
-1 مكعب مرق لحم بقري
من -1 إلى 2 ملاعق كبيرة من معجون الطماطم المزدوج
-1 ملعقة صغيرة من مسحوق الكاري الأصفر
ابدأ بتحضير العجين أولاً: ضع المارجرين وزيت الزيتون والملح والبيكنج بودر والكركم والدقيق في وعاء محضر الطعام أو في وعاء.
اعجن حتى تحصل على خليط رملي.
أضفالبيضة وأعد تشغيل الروبوت.
أضف الماء تدريجيًا. تعتمد الكمية على الدقيق المستخدم وحجم البيض.
يجب أن تحصل على كرة ناعمة من العجين.
انها لينة ومرنة قليلا.
لفها في فيلم مطاطي واتركها ترتاح في الثلاجة بينما تنضج باقي الوصفة.
تحضير مكونات الحشو. افرشوا الفلفل وقشروا البصل.
ضعهم في الخلاط لهرسهم.
ضعي مقلاة على نار عالية نسبيًا واسكبي الزيت. أضف هريس الخضار.
استفد من الماء الذي تركته الهريس لإضافة مرق اللحم.
عندما يغلي كل شيء نضيف اللحم المفروم.
افصل اللحم جيدًا بملعقة.
أضف مسحوق الكاري الأصفر.
فضلا عن ضعف تركيز الطماطم.
الآن عليك أن تطبخ وتطبخ وتطبخ مرة أخرى …! يجب أن يتبخر الماء. عليك أن تخلط جيدًا من وقت لآخر حتى لا تحرق القاع!
سوف تجف الحشوة تدريجياً وتصبح فطيرة: هذا ما نريده !!

إزالة العجين الزائد.
نأخذ دائرة من العجين ونقلبها. عادةً ما يكون الجانب السفلي أقل رشًا بالدقيق وسوف يلتصق دون الحاجة إلى إضافة الماء لإغلاق الباستيل.
ضع بعض الحشو.
ثم أغلق الباستيل.
أغلق الحد بأكمله بأسنان الشوكة. عليك أن تصر لأنه بخلاف ذلك ستفتح الباستيل أثناء الطهي …!
افعل الشيء نفسه مع باقي العجين والحشو. سيعطي هذا عددًا كبيرًا من ألوان الباستيل!
سخني مقلاة من الزيت واقلي الباستيل حتى يصبح لونها بنياً ذهبياً.
تذوقها كفاتح للشهية لا تزال ساخنة جدا مع صلصة صغيرة من الطماطم والبصل والفلفل !!
