Sablés salés apéritifs au sarrasin, noisette et fromage
Lorsque j’ai publié ma recette de crozets au sarrasin et aux champignons (recette ICI), j’avais réalisé pour l’occasion un crumble de sarrasin que je trouve délicieux. L’idée m’est venue de vous proposer une version en sablés pour l’apéritif. Les proportions sont du coup différentes, pour convenir à une pâte que je peux rouler en boudin, que je coupe ensuite en tranches. Ces petits sablés, naturellement sans gluten, sont comme j’aime : croustillants et savoureux. J’ai ajouté un peu de sucre, qui se marie à la perfection au fromage de la recette. Étonnants et originaux !
Versez dans un récipient, la farine complète de sarrasin, le parmesan, les noisettes en poudre, le sucre, le sel et du poivre du moulin. Pour les noisettes, je les ai hachées au mixeur. Si la poudre n’est pas parfaite, rien de grave et tant mieux en fait, car il y aura des petits morceaux de noisettes apparents !
Mélangez et ajoutez le beurre demi-sel.
Mélangez pour obtenir une texture sableuse.
Versez l’eau et mélangez pour obtenir une pâte homogène. Aucun risque de trop mélanger, car il n’y a pas de gluten.
Roulez en un boudin uniforme de 3-4cm de diamètre. Mettez au frais dans du film étirable pendant au moins 2 heures.
Coupez des tranches de 8mm d’épaisseur. On voit ici les petits morceaux de noisettes.
Placez-les sur une plaque allant au four.
Faites-les cuire 20 minutes à 180°C.
Laissez-les refroidir sur une grille puis conservez-les en boite hermétique. Ils sont parfaits pour l’apéritif !
