Le riz à la noix de coco (Arroz con Coco) est un plat colombien qui se marie à la perfection avec des poissons ou des viandes! Merci encore une fois à Diana après ses « patacones » de m’avoir appris à réaliser ce délicieux riz dont je suis d’ores et déjà adepte!
Mettre le lait de coco dans une casserole à fond épais sur feu moyen.
Laisser cuire en mélangeant presque constamment avec une spatule en bois. Le lait de coco va commencer à épaissir au bout de 10-15 minutes.
Je donne ici toutes les étapes pour que l’on ne perde pas espoir d’y arriver!
Le lait de coco devient assez pâteux. Il faut surtout bien racler le fond pour ne pas le laisser brûler. On peut au besoin, sortir la casserole du feu pour bien gratter le fond.
Le lait de coco va en quelque sorte caraméliser et le gras va se dissocier. C’est exactement ce que l’on souhaite!
Quand la couleur est bien ambrée, il est temps d’ajouter le riz!
Bien mélanger pour enrober tout le riz du gras de coco!
Voici le sucre « panela » que l’on peut trouver dans les épiceries exotiques, mais selon notre amie Diana, la cassonade fera aussi bien l’affaire! Ce sucre est cependant très particulier et a un goût de caramel vraiment délicieux!
Ajouter l’eau dans le riz, le sel et le sucre.
Laisser mijoter sur feu doux avec le couvercle un peu entrouvert.
Surtout ne plus mélanger et laisser cuire 10-15 minutes en surveillant. Lorsque toute l’eau a été absorbée, ajouter les raisins et cette fois bien mélanger.
Laisser reposer 10-15 minutes de plus pour laisser gonfler un peu les raisins avec la vapeur et que le riz s’assèche un peu. Il ne reste plus qu’à déguster!
