Difficile de voir la différence en photos entre tous les plats chinois que je mets en ligne. La recette du « poulet kung pao » est cependant ma recette préférée des recettes chinoises que je vous propose dans mon site. Je l’ai découverte pour la première fois à Chicago puis dans tous les Etats-Unis avant de la trouver pour de bon en Chine! Pour une fois je mets dans cette recette des blancs de poulets à la place des hauts de cuissse que je privilégie souvent. Simplement car cette recette cuit rapidement et les blancs restent moelleux.
Commencer par préparer la sauce avec d’une part la sauce de soja, la sauce d’huitre, la sauce teriyaki, le vin chinois et la sauce de prune mélangés dans un bol et la maïzena et l’eau dans un autre
Eplucher l’ail et le hacher finement.
On peut aussi éplucher le gingembre avec une cuiller très simplement!!
Hacher ensuite l’ail et le gingembre ensemble.
Couper également le poulet. Le but est de tout préparer à l’avance avant de cuire car la cuisson est rapide!
Mettre 2 ou 3 cuillerées à soupe d’huile dans un wok et mettre sur feu fort.
Quand l’huile es tchaude, mettre les piments séchés.
Les retirer quand ils commencent à être bien colorés. Mais laisser l’huile!!
Ajouter dans cette huile pimentée deux cuillerées à soupe du mélange haché ail/gingembre.
Quand l’ail et le gigembre commencent à être parfumés, ajouter les blancs de poulets.
Ne pas oublier de couper la ciboule chinoise. Des morceaux grossiers suffisent!
Ajouter la sauce soja/huitre/teriyaki/prune quand le poulet commence à avoir toutes ses faces cuites!
Bien mélanger et ajouter le mélange eau/maïzena.
Puis pour finir les cacahuètes et la ciboule et l’huile de sésame.
Finir en rajoutant 2 ou 3 piments séchés (mais pas ceux qui ont déjà été frits!). Servir immédiatement!
