Commencez par faire chauffer votre wok ou votre poêle avec 2 cuillerées à soupe d’huile, puis placez les crevettes. Laissez-les se colorer 2 minutes de chaque côté.
Mettez de côté et ne lavez pas le wok ou la poêle. Pour les pâtes de riz fraiches, j’utilise celles-ci que je trouve en épicerie asiatique. C’est un gros paquet, et il suffit de coupe les pâte à la largeur souhaitée. Vous pouvez bien sûr prendre d’autres pâtes de riz fraiches, d’une autre marque ! Pour celles-ci, je les coupe assez larges. Il faut ensuite les séparer.
Épluchez et coupez l’oignon en fines lamelles, videz et coupez le poivron de la même manière.
Mettez 2-3 cuillerées à soupe d’huile dans le wok (ou poêle) et ajoutez l’oignon, le poivron et les gousses d’ail finement hachées (au presse-ail c’est parfait ! ).
Laissez cuire en remuant régulièrement jusqu’à ce que l’oignon soit cuit à votre goût.
Ajoutez les pâte de riz.
Mettez tout de suite le saté en poudre, le sucre et le nuoc mam.
Toujours sur feu soutenu, mélangez délicatement pour ne pas casser les pâtes.
L’humidité des légumes va cuire les pâtes fraiches très rapidement. Quand elles ont bien ramolli, ajoutez les crevettes. Poivrez et salez (avec parcimonie car le nuoc mam sale aussi).
Un dernier mélange (il vaut mieux secouer le wok plutôt que mélanger à vrai dire !) et c’est prêt.
Servez sans attendre avec quelques feuilles de coriandre.
