J’avais honnêtement peur que ce gâteau soit un peu riche, mais il passe tout seul ! Il est même vraiment délicieux. La pâte à crumble au beurre demi-semi souligne parfaitement les pommes et le caramel. On dirait un gros sablé avec une couche fruité ultra savoureuse. Préparez votre sauce au caramel la veille, de cette façon, ce gâteau irrésistible se fera en quelques minutes !
Placez le beurre demi-sel, le sucre, la vanille liquide et la poudre de vanille dans un récipient.
Si vous avez un robot, mélangez à la feuille pour bien incorporer le beurre et le sucre.
Ajoutez la farine.
Mélangez de nouveau pour obtenir une pâte à crumble.
Placez une feuille dans un sens et une dans l’autre dans le moule carré. Mettez un peu moins de la moitié de la pâte dans le fond du moule et aplatissez à la cuillère.
Faites cuire à 170°C une trentaine de minutes pour dorer la pâte.
Épluchez et coupez finement les pommes. J’ai pris des granny smith, mais vous pouvez prendre celles qui vous plaisent. J’ai pris une mandoline pour couper le plus régulièrement et finement possible.

Ajoutez les pommes. Vous pouvez en mettre plusieurs couches.
Remettez un peu de caramel et couvrez avec le reste de pâte en crumble.
Voilà ! Faites cuire maintenant au four à 170°C une quarantaine de minutes pour bien dorer le tout.
Laissez refroidir, démoulez et coupez en petites parts.
Vous pouvez le déguster froid ou réchauffé quelques secondes au four à micro-ondes. Vous pouvez même ajouter encore un peu plus de caramel sur le dessus…
