Sur mon blog de cuisine, je vous avais déjà proposé le gaspacho classique (recette ICI), le salmorejo (recette LÀ) et le gaspacho menthe avocat (recette par ICI). J’avais très envie de faire un gaspacho vert avec de beaux légumes bio pour les mettre ensemble sans les éplucher dans le blender. C’est prêt en quelques minutes seulement. Il faudra ensuite le mettre au frais quelques heures pour le servir bien bien froid et faire le plein de vitamines ! Un délice à faire et refaire quand il fait chaud et beau…
Enlevez les graines du poivron vert. Mettez dans le blender les tomates vertes, les courgettes et le poivron.
Un premier coup de mixeur. Mettez le demi concombre.
Mixez, placez la gousse d’ail et le demi oignon blanc.
Pour les petits pois, faites-les cuire 11 minutes à l’eau bouillante.
Puis rincez-les à l’eau froide jusqu’à ce qu’ils soient refroidis.
Hop dans le blender.
J’ajoute ma menthe poivrée et le basilic thaï.
Réduisez bien en purée et versez dans un grand récipient.
Ajoutez le sel, le vinaigre et l’huile d’olive.
Versez l’eau jusqu’à la consistance désirée, pour ma part, près d’un demi litre d’eau froide. Sans elle, le gaspacho est très pâteux à cause des petits pois et des courgettes.
On voit bien la différence de consistance !
Placez au moins 3 heures au frais avant de déguster.
