Encore une merveille du « Délice de la Casbah« . Cette recette est sans doute la plus simple de celles que j’ai apprises à réaliser avec Hakim et ressemble beaucoup à ma recette de « boulettes aux amandes et à l’orange« , à l’exception que les « doigts de la mariée » sont plongés dans le miel et ne contiennent pas de fleur d’oranger. Mais les deux sont délicieuses à leur manière.
Mettre la poudre d'amandes et le sucre dans un bol ou sur table et bien mélanger.Ajouter les oeufs battus et la demi orange mixée (liquide donc!).
Bien mélanger pour obtenir une pâte homogène un peu collante
Mettre les amandes effilées sur un torchon. De cette façon, ce sera plus facile pour les remettre dans une boite à la fin de la recette et surtout il suffit de remonter les bords du torchon pour remettre les amandes au centre.
Préchauffer le four à 200°C.Préparer un petit bol d'eau froide à côté de soi pour se mouiller les doigts de la main qui prendra la pâte et la paume de la main dans laquelle on la roulera. De cette façon, la pâte qui est très collante, ne restera pas comme une glue dans la main. Faire des boulettes et les jeter dans les amandes effilées.
Puis rouler directement dans les amandes pour former un boudin.
Rien de bien difficile dans ce geste!!
Poser les boudins sur une plaque garnie de papier sulfurisé.
Mélanger le miel et l'eau de fleur d'oranger en faisant chauffer si nécessaire le tout. Mettre à cuire les plaques 15-20 minutes à 200°C.
Plonger délicatement les boudins dans le miel tiède, ils se transformeront en "doigts de la mariée"...!
Laisser 10 minutes dans le miel puis laisser égoutter sur une grille.
