Voici une recette de « Chili con carne ». Je dis bien ‘une’ car il en existe en effet une quantité incroyable. De plus, j’enfreins un petit peu ma règle de coller toujours au plus près de la tradition, car le « chili » d’origine ne contient pas de haricots rouges. Mais c’est tellement bon avec! Il faut savoir que ce plat est … américain et non mexicain! Il a été créé au Texas mais on sent bien sûr les influences. Mais ne demandez surtout pas à un mexicain la recette de ce plat! Plus vous laisserez mijoter ce plat, meilleur il sera. Je cuis le mien près de cinq heures…
Préparer la viande hachée et les autres ingrédients.
Ajouter la viande dans l’ail qui commence à peine à colorer.
Hacher finement l’oignon.
Couper finement les poivrons (sans les pépins!).
Ajouter les oignons et les poivrons dans la viande quand celle-ci est cuite. Mélanger régulièrement.
Peler les tomates en les plongeant quelques secondes dans l’eau bouillante.
Les couper en morceaux et les ajouter dans le plat de cuisson.
Ajouter la boite de tomates pelées et remplir l’équivalent de la moitié de la boite en eau que l’on verse ensuite dans le plat.
Ajouter toutes les épices.
L’origan séché.
Laisser réduire pendant une heure, toujours sur feu modéré en mélangeant régulièrement. Ajouter ensuite les haricots égouttés.
J’ai mis des haricots en boite. Ils sont très pratiques et sont parfaits pour ce plat. J’ai mis 3 boites de 450g (poids net égoutté 250g). Conseil de Bernard: J’ai égoutté deux boites et mis le jus d’une. Ce jus donne une couleur et une consistance très agréable.
Bien mélanger et laisser cuire aussi longtemps que possible sur feu faible. Plus ce plat mijote, meilleur il sera.
Voici le résultat au bout de 4h30 de cuisson. Si le chili devient trop « pâteux », il ets tout à fait possible d’ajouter de l’eau.
C’est d’ailleurs ce que je fais pour le réchauffer le lendemain.
On peut le servir avec des feuilles de coriandre fraiches…
