Envie d’une belle salade et de vert dans votre assiette? Je vous propose ma salade de chou kale aux edamame, avocats et noix de pécan. J’en avais mangé une similaire à New-York et il me tardait de la refaire. Je prépare ici une sauce délicieuse à base d’huile d’olive, de vinaigre balsamique, de tahiné et d’une touche sucrée à base de sirop d’agave. Du coup elle convient aux végans. Mais surtout c’est une salade qui fera un vrai repas. On parle beaucoup du chou kale, et j’espère que cela ne sera pas qu’une mode, car je la trouve très consistante et roborative. Je vous avais fait des chips de chou kale ultra croustillantes dans mon livre Végéterrien et que je vous proposais aussi en vidéo dans un facebook live du 11 octobre 2017 que vous pouvez retrouver ICI.
Faites tout d’abord cuire les edamame à la vapeur pendant 8-9 minutes. Je les trouve déjà écossés dans les supermarchés asiatiques. Vous pouvez prendre des fèves ou des petits pois que vous ferez cuire de la même façon.
Dès qu’ils sont cuits, rincez-les à l’eau froide pour stopper leur cuisson. Voici le chou kale.
Lavez-le à l’eau claire puis essorez-le. Il suffit ensuite de tirer la grosse nervure centrale.
Coupez-le en morceaux au couteau.
Dans un grand récipient, mettez le chou, les edamame.
Ajoutez les avocats épluchés et coupés en morceaux et les noix de pécan en morceaux.
Pour la sauce mettez tous les ingrédients dans un bol (ail écrasé au presse-ail) et mélangez soigneusement. Salez et poivrez à votre goût.
Vous pouvez verser toute la sauce dans la salade et mélangez le tout le mieux possible. Ou alors comme sur la photo, vous pouvez laisser la sauce à disposition à côté !
