Une soupe est toujours la bienvenue quand la saison fraîche arrive. Je vous propose une version d’un assemblage classique et assez intemporel : carottes, patates douces, lait de coco et gingembre. Prête en une vingtaine de minutes à peine, elle sera parfaite pour un dîner réconfortant. À vos casseroles !

  • Pour cette recette, nul besoin en réalité de peser vos ingrédients. Je mets ici des valeurs qui conviennent, mais libre à vous de modifier au besoin. En gros, il faut autant de carottes que de patate douce.
  • Épluchez les carottes et la ou les patates douces (tout dépend de leur taille).
  • Coupez-les en morceaux et placez-les dans une casserole.
  • Ajoutez le gingembre fraichement râpé.
  • Épluchez et coupez l’oignon.
  • Versez l’eau, l’huile d’olive et salez à votre goût.
  • Faites cuire 15-20 minutes à ébullition.
  • Mixez la soupe (j’utilise pour cela un mixeur plongeant) puis versez le lait de coco. 
  • Si la soupe est trop épaisse à votre goût, versez un peu plus d’eau jusqu’à obtenir la consistance désirée. Ajustez aussi le sel à votre palais.
