Pesto coriandre cacahuètes épinard et citron vert

Maintenant que j’ai terminé mon prochain livre, je peux revenir dans ma cuisine pour mon activité préférée ! Alors je commence tout doux avec un nouveau pesto, cette fois un peu différent. Avec des feuilles d’épinard, de la coriandre fraiche, des cacahuètes grillées et du citron vert ! Il a un peps inattendu et donne une fraicheur délicieuse. Il sera parfait dans plein de recette ou tout simplement sur du pain grillé !

Ingredients

Pesto :

100 g feuille d’épinard
80 g parmesan
2-3 petites gousses d’ail
75 g cacahuètes grillées (si non salées, ajoutez le sel en bas, si elles le sont déjà, oubliez-le !)
50 g coriandre fraiche
100 g huile d’olive
le jus d’un demi citron vert
le zeste d’un demi citron vert

Instructions

Lavez et essorez les feuilles d’épinard et de coriandre. Épluchez les gousses d’ail. Coupez en morceaux le parmesan. Mettez le tout avec les autres ingrédients dans un petit mixeur et mettez en route.
N’oubliez pas le zeste et le jus du demi-citron vert.
Mixez soigneusement le tout.
C’est déjà prêt ! Je vous donne une recette délicieuse à faire avec cet incroyable pesto. Il est aussi très bon sur un simple morceau de pain grillé !

Now that I’ve finished my next book, I can get back into my kitchen for my favorite activity! So I’m starting off easy with a new pesto, this time a little different. With spinach leaves, fresh cilantro, roasted peanuts and lime! It has an unexpected pep and gives a delicious freshness. It will be perfect in many recipes or simply on toast!

Pesto :

100g spinach leaves
80g of parmesan cheese
2-3 small cloves of garlic
75g of roasted peanuts (if unsalted, add salt at the bottom, if already salted, forget it!)
50g of fresh coriander
100g of olive oil
juice of half a lime
the zest of half a lime

Instructions :

Wash and spin-dry the spinach and coriander leaves. Peel the garlic cloves. Cut the Parmesan cheese into pieces. Put it all together with the other ingredients in a small blender and start it up.

Don’t forget the zest and juice of half a lime.

Mix carefully.

It’s already ready! I give you a delicious recipe to make with this incredible pesto. It is also very good on a simple piece of toast!
