Delicacies

First recipe made from Valentin. Thanks again to the team for these days of training. So I start with the gourmandises, a very simple recipe (if you don’t temper the chocolate) but above all incredibly addictive! I’ve been thinking about making these sort of chocolate sand roses for a long time, but I’m not a big fan of corn flakes. Until I try them at the Valentine’s! The treats are delicious with their nuts, hazelnuts and chocolate (milk or dark) tempered and crisp. Try it now!

Recipe for 6 treats:

-150g of cornflakes
-70g of chopped nuts
-70g of chopped hazelnuts
-300g of milk or dark chocolate (ideally tempered couverture)

Put the cornflakes in a large container (when you mix them, they may overflow into a small container!).

Mix the nuts and hazelnuts.

Chop them with a large knife.

Put them in the oven at 180°C for 8-10 minutes (while watching) to roast them slightly.

Add to corn flakes.

Melt the chosen chocolate (dark or milk). The ideal is to use couverture, to obtain a tempered chocolate (which will not whiten when cooling). See the tempered chocolate method here!

Use the mycryo caco method I describe here!

Add the mycryo… This step is only for those who have the cover. If not, simply pour the melted chocolate directly onto the corn flakes.

Pour over corn petals.

And mix well!

You don’t want to see the color of the corn flakes anymore, everything has to be coated in chocolate. This means you have to mix for quite a while because there is enough chocolate for this amount of corn flakes, but it takes time to cover the petals perfectly.
