Ingredients: 600 g de cœur d'artichauts; 3 gousses d'ail; 15 g de chapelure de pain; 175 g d'huile d'olive; 1 jus d’un citron jaune; 50 g de parmesan; sel; poivre

Caviar d'artichauts

Une petite recette simple et rapide qui sent déjà bon les beaux jours ! Ce petit "caviar" d'artichauts se fait au mixeur en quelques minutes (bon, après avoir cuit les fonds d'artichauts !) et sera absolument délicieux sur du pain frais (ici fait maison). Le goût de l'artichaut est bien présent et est relevé par le parmesan et l'huile d'olive. Mon petit secret est de surtout bien poivrer !!

Commencez par faire cuire à la vapeur vos cœurs d'artichauts.
Je les cuis 20 minutes. C'est plus que quand je les prépare pour les manger entiers, mais ici ils seront réduits en purée.
Refroidissez-les sous l'eau froide puis égouttez-les. Placez-les dans le bol de votre mixeur avec les gousses d'ail.
Ajoutez le reste des ingrédients.
Mixez jusqu'à avoir la consistance désirée. Salez à votre goût et poivrez généreusement.
Servez avec un peu d'huile d'olive sur du pain fraichement grillé !

Artichoke caviar

A quick and simple recipe that already smells good! This little artichoke "caviar" can be made in a blender in a few minutes (well, after cooking the artichoke bottoms!) and will be absolutely delicious on fresh bread (homemade here). The taste of the artichoke is very present and is enhanced by the parmesan and olive oil. My little secret is to add pepper !

Recipe for 6 people:

600g of artichoke hearts
3 cloves of garlic
15g of breadcrumbs
175g of olive oil (there is a lot but it is very good!)
juice of one lemon
50g of parmesan cheese
salt pepper

Instructions:

Start by steaming your artichoke hearts.

I cook them for 20 minutes. This is more than when I prepare them to eat them whole, but here they will be pureed.

Cool them under cold water and drain them. Place them in the bowl of your blender with the garlic cloves.

Add remaining ingredients.

Blend to desired consistency. Add salt to taste and pepper generously.

Serve with a little olive oil on freshly toasted bread!
