Voici une nouvelle recette de mes chères amies Myriam, Lalla Fatima et Touria! Nous avions fait ette recette en mai dernier lors de mon séjour culinaire à Casablanca et Rabat (voir le voyage culinaire ICI!). Une délicieuse recette marocaine qui peut servir d’accompagnement pour le couscous. Il existe même un couscous composé uniquement de semoule et de tfaya (le couscous tfaya). Je ne vous dis pas l’odeur incroyable que dégage cette recette d’oignons caramélisés à la cannelle et aux raisins. Un véritable délice et un véritable supplice si l’on essaie d’y résister! Car on peut imaginer l’accompagner pour d’autres plats!
Les mettre dans une grande casserole sur feu modéré.
Ajouter le beurre, l’huile, les bâtons de cannelle, le sel, le poivre et le cube de safran.
Bien mélanger et laisser cuire en mélangeant de temps en temps pour ne pas laisser les oignons brûler.
Quand les oignons sont bien cuits (mous au toucher), ajouter les raisins et la cannelle en poudre.
Ajouter le sucre en poudre et augmenter le feu.
Toujours en mélangeant constamment, il faut laisser le sucre caraméliser légèrement.
Toute l’eau des oignons doit s’évaporer et le gras doit revenir pour frire et caraméliser les oignons.
C’est prêt quand il n’y a plus de liquide du tout sauf du bon gras! Il faut ensuite adapter à son propre goût! J’avais adoré quand les oignons étaient bien caramélisés et que les oignons deviennent translucides de gras!! Nous verrons ensuite les couscous que l’on accompagnera de cette tfaya, renversant!!
