Il n’y a pas longtemps, j’ai goûté une soupe en sachet venant d’une boutique bio aux champignons et à l’avoine. J’ai trouvé le résultat très intéressant et me suis dit qu’elle serait encore meilleure faite maison. C’est le cas mais surtout, cette recette est prête en 10 minutes. Entre le goût de céréale des flocons d’avoine et la saveur boisée des shiitakés (que vous pouvez remplacer par des champignons classiques), la soupe est bien réconfortante et a une consistance très agréable. Un délice à refaire dès que le froid pointe le bout de son nez !
Épluchez l’échalote et coupez les champignons en morceaux.
Faites chauffer l’huile d’olive dans une grande casserole et ajoutez les morceaux d’échalote. Peu importe qu’ils soient bien coupés, car tout est mixé dans moins de 10 minutes !
Ajoutez les shiitakés.
Laissez cuire 2 minutes en remuant pour éviter que le fond ne brûle. Versez le litre de bouillon de légumes.
Portez à ébullition et laissez cuire 2 minutes de plus. Versez les flocons d’avoine en une fois.
Mélangez et faites bouillir 2 minutes.
Ajoutez un peu de persil haché, salez et poivrez à votre goût.
