J’avais très envie d’une petite salade ultra fraiche et saine tout en étant nourrissante. C’est le cas avec cette salade de lentilles corail, cuites al dente, avec des raisins secs, de l’oignon rouge mariné et de la menthe. Un petit temps de repos au réfrigérateur et elle sera prête à être dévorée pour un pique nique ou un buffet d’une belle journée ensoleillée !
Pour les lentilles, je ne les fais cuire que… 5 minutes à l’eau bouillante. C’est beaucoup moins que le temps de cuisson habituellement indiqué, mais cela donnera des lentilles al dente parfaites en salade !
Rincez-les à l’eau froide puis égouttez-les bien. Ajoutez les raisins secs.
Versez la menthe séchée.
Coupez l’oignon rouge épluché en petits morceaux.
Versez dans un récipient et versez de l’eau bouillante dessus.
Laissez l’eau sur l’oignon pendant 15 secondes puis égouttez bien.
Versez le jus de citron dessus : l’oignon devient rose ! Laissez reposer 15 minutes.
Puis ajoutez dans la salade.
Mélangez soigneusement. Salez et poivrez à votre goût.
Mélangez tous les ingrédients de la sauce.
Moutarde aussi, salez et poivrez.
Ajoutez autant de sauce que nécessaire. Je n’ai pas tout mis, il devait m’en rester 2 cuillerées à soupe une fois versée dans la salade.
Mélangez une dernière fois.
Laissez reposer au moins 3 heures au frais avant de déguster !
