Profitons encore de l’été (même si c’est bientôt la rentrée ! ) avec cette salade légère aux lentilles, carottes et saumon fumé. C’est le genre de petites salades que j’achète quand je n’ai pas le temps de cuisiner si je suis loin de la maison et du coup j’avais envie de la faire en plus grand quantité pour l’apporter dans ma boite hermétique. Elle est parfaite quand il fait chaud, saine et nourrissante. À faire et refaire…
Faites cuire vos lentilles vertes 17 minutes à l’eau bouillante salée.
Égouttez-les bien puis versez -les dans un récipient.
Épluchez les carottes.
Coupez-les en en tronçons.
Puis en morceaux pas trop petits.
Ajoutez-les aux lentilles.
Préparez la vinaigrette: mélangez les huiles, la moutarde et le jus de citron. Si je ne mets pas que de l’huile d’olive, c’est que je trouve son goût trop prononcé pour cette salade. Mais vous pouvez ne mettre que l’une ou l’autre.
Versez la sauce dans le récipient.
Mélangez soigneusement puis goûtez pour rectifier l’assaisonnement.
Coupez le saumon fumé en bandes puis en morceaux pas trop petits et hop dans la salade.
Mettez au frais pendant au moins deux heures avant de déguster !
