Comme une envie de soleil dans votre assiette? J’ai fait récemment un grand buffet froid pour des amis, et j’avais fait ce houmous de lentilles corail et patate douce. Un vrai délice qui a eu un très gros succès ! Tout le monde s’est jeté dessus. Alors oui officiellement ce n’est pas un houmous car il n’y a pas de pois chiches. Mais je pense qu’aujourd’hui tout le monde comprend le houmous par sa consistance et par le fait que ce sont des légumes secs cuits et mixés avec de la purée de sésame. Celui-ci est vite devenu l’un de mes favoris !! À faire et refaire cet été…
Faites cuire les patates douces. Il suffit de les éplucher et de les couper en morceaux.
Faites cuire à la vapeur 15-20 minutes.
Il suffit de vérifier la cuisson avec un couteau.
Faites cuire les lentilles corail 4-5 minutes à l’eau bouillante salée.
Versez les lentilles dans une passoire et arrosez-les d’eau fraîche jusqu’à ce qu’elles soient refroidies. Égouttez-les bien puis versez-les dans un mixeur. Ajoutez le tahiné.
Les patates douces.
Mais aussi l’huile, le lait de coco, les épices, (sel et poivre à votre goût) et le petit bouquet de coriandre. N’oubliez pas le jus de citron vert et le vinaigre blanc.
Mixez et ajoutez un peu d’eau pour avoir la consistance désirée. Cela peut varier entre 50 et 100ml. Mais c’est à vous de voir. Mixez jusqu’à avoir une crème onctueuse.
Versez dans des récipients puis arrosez d’un filet d’huile d’olive. À déguster sur du pain.
