Il y a de cela plus de 10 ans, j’ai habité quelque temps au Caire en Égypte. Il y a plein de spécialités de là-bas que j’ai bien l’intention de partager avec vous un jour. Voilà l’une d’entre elles ! On dirait visuellement du guacamole, mais cela n’a strictement rien à voir. Il s’agit ici de fèves vertes broyées avec des épices et des herbes, mais également avec des oignons frits et de l’huile d’olive. Un délice à déguster avec du pain, un peu comme du hoummos ou du babaganoush. J’ai cherché une façon simple pour que vous puissiez le préparer sans y passer des heures. J’utilise ici des oignons frits déjà préparés que vous trouvez facilement au supermarché. À vous de voir si vous voulez les faire frire vous même…
Faites cuire les fèves. Vous pouvez utiliser des sèches que vous ferez tremper une nuit. Il faudra ensuite les cuire suivant ce qui est indiqué sur le paquet puis enlever leur petite peau. Sinon on en trouve aussi des congelées déjà épluchées ! C’est celle que j’ai utilisées et je les ai faites cuire 5 minutes à partir de la reprise de l’ébullition.
Égouttez puis rincez-les à l’eau froide. Faites-les ensuite sécher dans du papier absorbant ou un torchon propre.
Mettez-les dans un mixeur avec le sel et les oignons frits. Vous pouvez frire vous-même des oignons frais coupés en tranches, mais on trouve très facilement des oignons frits au supermarché. Cela ira plus vite !
Ajoutez la coriandre, l’ail et le persil.
Mixez soigneusement pendant au moins 2 minutes. Versez ensuite l’huile d’olive.
N’oubliez pas les épices: coriandre en poudre et cumin en poudre.
Un dernier coup de mixeur et hop c’est bon !!
Dégustez le bissara avec du pain frais ou du pain plat (type libanais) passé au grille-pain.
