Cette recette porte beaucoup de noms différents. Le Baba Ganoush, moutabal, mtabal… Mais le résultat est le même et toujours délicieux quand il est fait « maison ». Pour ceux qui ne connaissent pas encore, il s’agit d’un caviar d’aubergines à la crème de sésame (tahina), relevé d’huile d’olive, d’ail et de jus de citron. On retrouve ce plat dans le bassin méditerranéen, au Liban, en Egypte… Une petite merveille, surtout avec des morceaux de pains trempés dedans!
Commencer par mettre au four les aubergines. Il suffit de les mettre sur une plaque allant au four, en les plaçant sur un papier d’aluminium, pour protéger le plat.
Mettre le four en position « grill » et rôtir l’aubergine en la retournant de temps en temps. La peau va griller et même brûler, mais cela est tout à fait normal. ll faut que l’aubergine soit molle à l’intérieur. Le temps de cuisson dépend tellement du four, que je ne sais pas combien de temps cela peut prendre. Il faut surveiller.
Laisser refroidir complètement avant de manipuler. Prélever la chair de l’aubergine et placer dans un récipient.
Bettre la chair avec une cuiller pour réduire en purée.
Ajouter l’huile d’olive.
Le sel et la crème de sésame (tehina, tahini, tahin…).
Presser les citrons et verser au fur et à mesure pour goûter et ajuster.
Écraser les deux gousses d’ail, les ajouter et bien mélanger.
Mettre le babaganoush dans un bol et arroser d’huile d’olive. Laisser reposer au frais avant de servir, mais ce plat est tout autant délicieux servi tiède. Plonger dans le babaganoush, des morceaux de pain pita grillé!
