Gâteau citron, noix de coco et lait concentré sucré

Ne tenez pas trop compte de la photo qui ne rend pas du tout justice à la consistance de ce délicieux gâteau ! J'avais remarqué la réaction assez incroyable du yaourt et du lait concentré sucré avec le jus de citron dans mon keylime pie. J'ai voulu voir si la réaction serait similaire dans un gâteau plus classique et c'est le cas. Le gâteau encore tiède a une texture vraiment étonnante. Je ne suis pas fan de lait concentré sucré, mais ici il a son importance. Gardez également en tête que ce dernier n'est pas composé de sucre à 100%, mais d'un peu plus de la moitié. J'en tiens donc bien sûr compte pour la quantité du lait concentré sucré dans le gâteau ! On est donc sur un gâteau un peu moins sucré qu'un simple quatre-quarts !

  • Faites fondre le beurre demi-sel dans un récipient, puis ajoutez le lait concentré sucré.
  • Mélangez puis ajoutez-y les œufs. Cela fait en gros 4 gros œufs pour avoir 230g d’œuf. Mélangez soigneusement.
  • Ajoutez la farine et la levure chimique.
  • Mélangez puis ajoutez le zeste de deux citrons verts non traités.
  • Et le jus de citron, à savoir 60g. Mélangez puis versez la noix de coco déshydratée. Un dernier mélange et la pâte est prête.
  • Versez dans un moule de 22cm de diamètre, dont le fond sera garnie de papier sulfurisé découpé au bon diamètre.
  • Faites cuire 50 minutes au four à chaleur tournante à 160°C.
  • Démoulez puis dégustez tiède ou au moins à température ambiante ! Avec ou sans sucre glace.
